RESUMO.Foram utilizados 45 cordeiros machos não castrados (22) e fêmeas (23) da raça Texel, abatidos ao nascimento, aos 25 (P1) e aos 33 kg (P2) de peso vivo, com o objetivo de avaliar as proporções e o crescimento relativo de osso, músculo e gordura da carcaça. Os animais, 24 horas após o parto, foram distribuídos em um delineamento inteiramente casualizado, em um esquema fatorial 3 x 2 x 2, (três métodos de alimentações, dois sexos e dois pesos de abate) e confinados em baias coletivas num galpão coberto com piso cimentado. Os métodos de alimentação determinaram diferença (P<0,05) quanto às proporções de músculo e gordura da carcaça. O sexo influenciou a composição óssea de machos (19,43%) e fêmeas (18,09%) (P<0,05). Entre pesos de abate, apenas as proporções de músculo e gordura diferiram (P<0,05), P1=63,27 e 16,74% e P2=59,28 e 22,10%, respectivamente. Observou-se que o osso é de crescimento precoce, o músculo isométrico e a gordura tardia. Houve diferença (p<0,05) para proporção de músculo e gordura da paleta entre pesos de abate, sendo 63,55% (25 kg) e 58,76% (33 kg) para músculo e 16,53% (25 kg) e 20,21% (33 kg) para gordura. A maior (p<0,05) deposição de gordura na perna ocorreu ao maior peso de abate, mas entre métodos de alimentação e sexos não houve diferenças significativas (p≥0,05).Palavras-chave: cordeiros, coeficiente de alometria, composição tecidual, carcaça.
