Amaranthus species have great potential for human food due to their nutritional and functional properties, but there are few phytotechnical studies with this crop, making its cultivation unfeasible. Aiming to encourage the production of these species, this study aimed to evaluate and distinguish the morphological, chemical and physiological characteristics of seeds of Amaranthus sp. (commercial species), A. viridis and A. hybridus. The experiments were performed in a completely randomized design, evaluating seeds in size classes (850, 600 and 425 µm) and characterizing them by image analysis using the GroundEye® system, near-infrared spectroscopy (NIR) and radiographic analysis. The first germination count, germination and germination speed index with and without KNO3 were performed to evaluate the physiological quality of seeds. The results were submitted to analysis of variance and the means compared by the Tukey test. Radiographic analysis showed that the seeds of the three studied species were filled in the size class of 600 and 850 µm, without dormancy, but the commercial species had higher germination speed. GroundEye® and NIR allowed distinguishing the three species according to their geometric characteristics, predominance of color and chemical components.
O caruru (Amaranthus spp.) é considerado uma hortaliça não convencional, que por uma série de fatores deixou de ser consumida pela população, seja pela introdução de outras espécies e variedades de hortaliças ou devido ao aumento do consumo de alimentos industrializados e mudanças dos hábitos alimentares, resultando em informações limitadas da espécie. Diante disso, o objetivo do trabalho foi realizar a caracterização dos compostos nutricionais de interesse, presentes nas folhas e nos grãos das espécies Amaranthus hybridus L. (caruru vermelho) e Amaranthus viridis L. (caruru de mancha). Em laboratório foi usado o delineamento inteiramente casualizado, com quatro tratamentos (folhas do A. hybridus, grãos do A. hybridus, folhas do A. viridis e grãos do A. viridis) em triplicata. As amostras foram utilizadas para as seguintes avaliações: composição centesimal, valor calórico e quantificação dos macro e micronutrientes. Foi realizada a análise dos componentes principais com auxílio do programa Chemoface, versão 1.4. Ambas as espécies de Amaranthus spp. apresentaram em suas folhas e grãos níveis significativos de nutrientes de interesse como lipídeos, proteínas, fibras, carboidratos, e os minerais P, K, Ca, Mg, S, Cu, Fe, Mn, Zn e B, em teores mais elevados dos que apresentam as hortaliças convencionais utilizadas de forma similar.
O presente trabalho procurou identificar inovações tecnológicas no campo da agroecologia, com base em trabalhos científicos em nível mundial e as suas relações com as experiências agroecológicas do Sul de Minas Gerais. Foi realizada pesquisa bibliográfica e bibliométrica abrangendo estudos científicos sobre agroecologia e agricultura orgânica. Para isso, foi realizado uma busca nas bases de periódicos SciVerse Scopus, Web of Science e Scielo. Foi sistematizado o estado da arte em agroecologia. Ao mesmo tempo foi feita uma pesquisa ao nível de campo como um estudo de caso, caracterizando e mapeando as experiências regionais por meio de questionários semiestruturados. Após as coletas e análises dos dados provenientes do conhecimento científico e da prática das famílias agricultoras, foi possível realizar relações entre os dois conhecimentos. Foram contabilizados 4.739 registros de documentos científicos. Foram entrevistadas 10 organizações de agricultores. Foram identificadas técnicas e inovações em agroecologia, obtendo-se uma alta relação entre os conhecimentos científicos e a prática local dos agricultores agroecológicos do Sul de Minas Gerais.
The objective of this research was to evaluate the physicochemical characteristics of Amaranthus spp. commonly happening in Brazil, besides defining the efficiency of different extraction processes of the phenolic compounds and of the antioxidant activity. Five species of the genus Amaranthus (A. spinosus, A. viridis, A. retroflexus, A. hybridus var. paniculatus e A. deflexus) were evaluated in regard to their physicochemical characteristics such as vitamin C, soluble solids, pH, moisture, lipids and protein levels as well as the coloration of the leaves. Also, the phenolic compounds and the antioxidants were defined through four extraction processes (reflux; hydroalcoholic turbo-extraction; aqueous; and methanolic). The species A. spinosus has stood out for its vitamin C levels, pH and moisture, indicating the potential of the species when compared to the others. The leaf extracts of the five Amaranthus species present differences in the total phenol levels, flavonoids and hydro flavonoids when subject to different extraction methods. The antioxidant activities were favored by the reflux and hydroalcoholic turbo-extraction, with A. viridis standing out in the reflux methods and A. spinosus in the hydroalcoholic.
