A participação do Brasil no mercado de cerveja tem grande destaque atualmente devido às proporções imprevisíveis e notáveis que a produção nacional tem assumido nas últimas duas décadas. O estado de Minas Gerais se destaca em produção artesanal de cerveja e se configura como o segundo estado brasileiro na produção de rótulos especiais. Neste contexto, este trabalho apresenta os custos de instalação de uma microcervejaria, e analisa a viabilidade da implantação de uma microcervejaria na cidade de Belo Horizonte-MG com base nos indicadores financeiros e no perfil de consumo de cervejas artesanais. Consideramos os custos com o processo de produção da bebida (maltagem, moagem, mostura, fervura, fermentação, maturação, filtração, envase e expedição) e para avaliar o perfil de consumo, fez-se uma pesquisa com aplicação de questionário para um público diversificado. O empreendimento proposto é rentável, considerando que o mercado cervejeiro está em alta no Brasil e a região escolhida para instalação do mesmo é promissora. Consideramos todos os cálculos referentes ao Payback Simples, VPL e TIR, e TMA acima da taxa SELIC. Os resultados foram positivos, com os valores de 5 meses de tempo de retorno do capital, R$ 6.326,77 e 19% (VPL e TIR, respectivamente). O perfil do mercado consumidor brasileiro de cerveja artesanal é robusto e inclui pessoas de ambos os gêneros, diversos níveis de escolaridade e classes socioeconômicas. Os dados do estudo indicam que o maior percentual de consumidores é do sexo masculino, jovens até 35 anos, casados, pós-graduados moradores do Sudeste.
This study aimed to evaluate the stability of natural antioxidants in minimally processed Anredera cordifoliaand Lactuca canadensisand their physical-chemical and antioxidant characteristics at time zero of storage (T0) and after 3, 6, 9 and 12 days, at a temperature of 7 °C. For the attribute color, L. canadensisdid not show significant differences between the parameters, whereas A. cordifoliashowed variation in its lightness from the third day of storage. Both vegetables had significant increments of pH, which ranged from 5.77 to 6.16 in A. cordifoliaand from 6.23 to 6.43 in L. canadensis. The contents of soluble solids also increased significantly, from 2.28 to 4.17 °Brix and from 4.89 to 6.30 °Brix in A. cordifoliaand L. canadensis, respectively. No significant difference was observed in total titratable acidity at any of the times evaluated (p>0.05). Among the bioactive compounds of the minimally processed vegetables, the contents of carotenoids, tannins, and total phenolic compounds were affected by storage, demonstrating that this process has an influence on the concentrations of the natural antioxidants studied.
The Hermanella complex is a well-established monophyletic group of Hagenulinae mayflies, but the phylogenetic relationships among its members are still being discussed. In order to fill some gaps in the taxonomy of this group we describe, for the first time, the eggs of eight species of this complex (Hermanella amere, Hermanella mazama, Hydromastodon sallesi, Hydrosmilodon gilliesae, Hydrosmilodon plagatus, Leentvaaria palpalis, Paramaka incognita, Paramaka sp.) using scanning electron microscopy, including some important members whose generic allocation have been questioned. The egg morphology in these eight species of Hermanella complex and their similarities with other species of the complex are discussed.
