Cyclodextrins (CDs) are cyclic oligosaccharides comprised of six or more glucose units connected by α-1,4 bonds. They have hydrophobic cavities with a hydrophilic exterior, and are versatile receptors for a variety of substrates. This ability allows them to be applied in many fields, as distinct as supramolecular chemistry, nanotechnology, pharmaceuticals, green chemistry, agrochemicals, analytical chemistry, toiletries, foods, and cosmetics. This review summarizes several aspects related to the physico-chemical properties of CDs and discusses their potential applications illustrated by recent examples. INTRODUÇÃOAo longo das últimas décadas, as ciclodextrinas (CDs) vêm despertando grande interesse na comunidade científica e na química de macromoléculas, sendo descritas como "moléculas sedutoras, atraindo a atenção dos investigadores tanto no campo de pesquisa como no campo de tecnologias aplicadas" 1 . Szejtli afirmou que "dentre todas as moléculas receptoras em potencial, as CDs parecem ser as mais importantes" 2 . Tal afirmação deriva primordialmente do fato das mesmas, por pertencerem à família dos oligossacarídeos macrocíclicos, formarem complexos do tipo receptor-substrato servindo como um ambiente único para reações químicas 3 e possuírem a habilidade para formar complexos de inclusão com uma variedade de substâncias que têm suas propriedades alteradas pela complexação 4 . Por este motivo, as CDs vêm sendo muito utilizadas em produtos industriais, tecnológicos e em métodos analíticos. Como os efeitos tóxicos podem ser eliminados ou reduzidos pela seleção da CD apropriada, as CDs podem ser utilizadas como ingredientes de fármacos, em alimentos ou em cosméticos 2 . As CDs são formadas durante a ação de enzimas denominadas como CD glicosiltransferases (CGTases) sobre o amido 5 , sendo este o processo utilizado na produção industrial das mesmas. Usualmente, os polissacarídeos servem como precursores de oligos-sacarídeos cíclicos. Como resultado, a variedade de oligossacarídeos cíclicos naturais ou semi-sintéticos é limitada 6 . As mais importantes CDs apresentando ocorrência natural são as α-, β-e γ-CDs, que possuem 6, 7 e 8 monômeros de glicose, respectivamente (Figura 1). As características estruturais das mesmas são conhecidas com base em investigações por cristalografia de raios-X no estado sólido e por estudos de RMN em solução. Estas moléculas possuem forma assemelhada a um cone, com uma cavidade de 7,9 Å de profundidade. Os diâmetros superior e inferior da cavidade das CDs são 4,7 e 5,3 Å para a α-CD, 6,0 e 6,5 Å para a β-CD e 7,5 e 8,3 Å para a γ-CD 7. a b s t r a c tThe Brazilian oil shale byproducts resulting from the Petrosix pyrolysis (retortage) process were submitted to a set of analytical techniques to evaluate their possible use as agricultural soil conditioners. Liquid dichloromethane extracts from the solid samples were analyzed using capillary column gas chromatography-mass spectrometry. The results showed that of the 16 PAHs designated by the U.S. EPA as priority pollutants, only phenanthrene, fluorene and naphthalene, present in the retorted oil shale sample taken from inside storage piles; benzo[k]fluoranthene, present in the dolomite limestone layer between the two layers of oil shale in the mine structure; and naphthalene, present in powdered raw oil shale, were above the limits established by the EPA. The solid Brazilian oil shale byproduct samples were also analyzed by X-ray diffractometry (XRD), diffuse reflectance ultraviolet-visible spectroscopy (DRUV-VIS), X-ray fluorescence spectroscopy (XRF) and electron paramagnetic resonance (EPR) spectroscopy. The XRD analysis showed that the pyrolysis process produces a "weathering" transformation, for example with the appearance of kaolinite diffraction lines in the retorted samples. The DRUV-VIS and XRF spectroscopy results indicated iron oxide goethite interactions with the PAHs present in the solid samples studied. The EPR spectroscopy showed that the samples row oil shale (g = 2.0044) and the powder oil shale (g = 2.0035), before the dichloromethane extraction, presented organic free radical signals associated with oxygen atoms. The other Brazilian oil shale byproduct samples, before and after the dichloromethane extraction, showed organic free radical signals associated with carbon atoms (g = 2.0022-2.0031).

A experimentação em química é fundamental para a construção de conceitos que permitam ao estudante compreender o mundo, sendo ação facilitadora do processo de ensino e aprendizagem. Esse artigo apresenta um projeto de estudo que propõe discutir o conceito de indicadores ácido-base, distinguindo colorimetricamente produtos do cotidiano dos estudantes, a partir do uso de indicadores naturais de pH em aulas experimentais de química no Ensino Médio. Os legumes utilizados foram repolho roxo, beterraba, cebola roxa e berinjela, os quais apresentam alto teor de antocianinas. Esta ação reforça os princípios da química verde de sustentabilidade e meio ambiente, não gerando resíduos tóxicos, promovendo a discussão de conceitos fundamentais da química, através de uma abordagem motivadora, e fortalecendo o processo de ensino e aprendizagem
The phytochemical research is an issue that can be approach by several areas of science. The Hydrangea sp., also known in Brazil, as "hortênsia" is an ornamental plant widely known because the presence of flavonoids, a class of antioxidant compounds, which can interact with aluminum ions in the soil, changing the color of the sepals of the Hydrangea flowers. In this work, the objective was to extract chlorophyll from leaves of Hydrangea sp. using three different solvents (dichloromethane, acetone and aqueous solution of acetone, 80 %). The obtained results indicated that in addition to chlorophyll, there were strong spectroscopic evidence of the presence of the carotenoids β-carotene and/or lutein, and lycopene. The used method can be applied to explain that: i) the leaves are green by the presence of the pigment chlorophyll; however, ii) they not only contain chlorophyll in their constitution, also have yellow and reddish pigments and; iii) the aging leaves lose their green color, by the breakage of the resonance of the porphyrin ring from chlorophyll and hence the other colors in the plant predominates. Keywords: carotenoids; chlorophyll; Hydrangea RESUMOA investigação fitoquímica é um tema que pode ser abordado por diversas áreas da ciência. A Hydrangea sp., também conhecida com hortensia, é um planta ornamental muito conhecida por possuir flavonoides, compostos antioxidantes, que interagem com íons alumínio no solo, alterando as cores das sépalas das flores. Este trabalho teve como objetivo extrair clorofila das folhas de Hydrangea sp. utilizando três solventes (diclorometano, acetona e solução aquosa de acetona, 80 %). Os dados indicaram que além de extrair clorofila, também há fortes evidências espectroscópicas da presença dos carotenoides β-caroteno e/ou luteína e licopeno. Assim, o método utilizado pode ser aplicado em aulas práticas para explicar que: i) As folhas são verdes pela presença do pigmento clorofila; ii) no entanto, elas não contém apenas clorofila em sua constituição; também possuem pigmentos amarelos e avermelhados; e iii) ao envelhecer, as folhas perdem a coloração verde, há pela quebra da ressonância do anel porfirínico da clorofila e, consequentemente, as outras cores presentes no vegetal tornam-se predominantes.
