The purpose of this study was to evaluate different binding agents for the preparation of salty cereal bars and to characterize them regarding their physical and sensory parameters. Four formulations of cereal bars were developed using collagen, guar gum, xanthan gum and psyllium as binders, which were evaluated for instrumental color and texture. The results of the instrumental analysis revealed that the cereal bars presented characteristic color and crispness for this type of product and the microbiological analyzes ensured food safety. Sensorially, the cereal bars showed good acceptability, especially the bars made with psyllium and xanthan gum binders in the parameters of appearance, texture, flavor and color. The different binders showed technological efficiency in the elaboration of salty cereal bars, but xanthan gum and psyllium were the ones that best corresponded to the expected attributes.
A doença celíaca caracteriza-se pela reação inflamatória induzida pela ingestão de glúten em indivíduos geneticamente predispostos. O número de pessoas celíacas identificadas tem aumentado consideravelmente nos últimos anos. Para celíacos não existe um tratamento clínico que promova a cura com uso de medicamentos, cujo tratamento consiste na exclusão permanente do glúten na dieta. Diante desta realidade, um novo perfil de consumidores desponta no cenário mundial, caracterizado por pessoas que procuram alimentos de boa qualidade sensorial e nutricional, de fácil preparo e benéficos à saúde.Este tipo de alimento está atraindo, também, pessoas não portadoras da doença celíaca, se tornando um grande nicho no mercado de alimentos. Diante do aumento da demanda por alimentos livres de glúten, indústrias alimentícias e comunidades científicas têm buscado desenvolver novos produtos. Nesse contexto, o presente artigo procurou apresentar as tendências deste mercado, novidades e inovações da última década, levando em conta os ingredientes utilizados, tecnologias e processamento de alimentos sem glúten, considerados nutritivos e sensorialmente aceitos.
