Farinha de yacon e inulina como ingredientes na formulação de bolo de chocolate, Hauly et al.
The research aimed at determining, using surface response methodology, an optimal chocolate cake formulation when wheat flour was partially replaced with inulin and/or yacon meal. The yacon meal used in the formulation was prepared by using tuberous roots of yacon (Polymnia sonchifolia Poepp. & Endl.). The optimization indicated that a formulation with 20% of the wheat flour replaced with yacon meal, 153 mL of water and no inulin showed the best values for hardness (3.638 N), cohesiveness (0.691) and specific volume (1.86 cm 3 g )1 ). A formulation with 40% of the wheat flour replaced with yacon meal, 6% replaced with inulin and containing 126 mL of water showed similar values to the optimized formulation for the three responses mentioned earlier but, in addition, it had a greater content of fructooligosaccharides and inulin. Consequently, both formulations may give useful functional foods with physical parameters comparable with the control formulation.
ResumoAtualmente, os consumidores estão mais conscientes da relação que existe entre alimentação e saúde, de modo que, a indústria de alimentos tem procurado oferecer produtos que apresentem benefícios múltiplos, associados ao sabor e à aparência. Inulina e oligofrutoses são polímeros de frutose vastamente encontrados em plantas sob a forma de carboidratos de reserva, e apresentam propriedades funcionais de grande importância para a indústria de alimentos. Tanto inulina como oligofrutoses vêm sendo utilizadas para enriquecer com fibras produtos alimentares. Diferentemente de outras fibras, não têm sabores adicionais, podendo enriquecer os alimentos sem alterar muito a viscosidade, aparência e sabor das formulações. As propriedades nutricionais da inulina e oligofrutoses são similares, assim, a decisão de formular com inulina ou oligofrutoses se dá em função dos atributos desejados no produto final. A inulina é mais indicada quando se pretende obter produtos com menor teor de gordura (como sorvete, bolo e sopa), enquanto oligofrutoses são adequadas para iogurtes de baixa caloria, doçura e para mascarar o sabor residual de adoçantes de alta intensidade utilizados em preparações alimentares. Estudos têm indicado que inulina e oligofrutoses apresentam características de prebiótico, por serem indigeríveis e desenvolverem o efeito bifidogênico, melhorando a microbiota intestinal. Recomenda-se que inulina e oligofrutoses sejam utilizadas simultaneamente com probióticos em alimentos para obtenção do efeito simbiótico. AbstractNowadays consumers are more conscious about the relation between food and health. Therefore food industry has been looking for food that has a lot of benefits besides good flavor and appearance. Inulin and oligofructose are fructose polimers, vastly found in plants as storage carbohydrates. They present important functional for the food industry. Both inulin and oligofructose have been used as fiber bulk in food products. Differently from other fibers, they do not add flavor, allowing the food to be improved without changing its viscosity. Inulin and oligofructose have similar nutritional properties. Inulin is more indicated for obtaining products with a low fat content such as ice cream, cake and soup, while oligofructose is indicated for yogurt with a low caloric value and in order to mask the residual flavor from high intensity sweeteners used in food preparation. Research has shown that inulin and oligofructose have prebiotic effects because they are not digestible and they can develop bifidogenic effects, improving the intestinal microflora. The simultaneous use of inulin and oligofructose with probiotic agents in food is recommended for symbiotic effects.
RESUMOOBJETIVO: Identificar a presença do Cryptosporidium spp. em amostras de água no município de Anápolis, Goiás. MÉTODOS: Foram coletadas 32 amostras de 5L de água de 16 bairros do município de Anápolis (antes e depois da água passar pela caixa d'água) e 4 amostras de água do Ribeirão Piancó. Após a coleta, as amostras foram submetidas à análise microbiológica para a pesquisa qualitativa de coliformes termotolerantes/totais (kit da "Alfakit-Tecnobac") e parasitológica para a pesquisa de Cryptosporidium spp. Para a análise parasitológica, as amostras foram filtradas, concentradas pelas técnicas de Ritchie e de Sheather, e coradas em triplicata com a coloração de Ziehl-Neelsen modificada. RESULTADOS: Os resultados foram negativos na análise parasitológica e na análise microbiológica houve positividade para coliformes totais na amostra, após a passagem pela caixa d'água, do bairro Cidade Universitária e em uma amostra do Ribeirão Piancó (ponto 1); e positividade para coliformes termotolerantes em outra amostra do mesmo ribeirão (ponto 2). CONCLUSÃO: ausência de Cryptosporidium spp. pode ser explicada por maior porosidade da membrana de filtração em relação a de outros estudos, uso de uma única metodologia de detecção, época de coleta em período de seca e variações pluviométricas. Ainda que os resultados apontem para uma baixa positividade microbiológica e ausência de Cryptosporidium spp. nas amostras analisadas nesta pesquisa, faz-se necessário o monitoramento constante da qualidade da água visando sempre a saúde e o bem-estar da população que é abastecida por esta água. A presença de Lactobacillus sp. (Bacillus de Döderlein) na microbiota vaginal, impede o crescimento de outras espécies bacterianas que podem ocasionar prejuízo à saúde feminina. Gardnerella vaginalis (GV) é uma bactéria anaeróbia facultativa sob a forma de cocobacilos gram-variáveis, caracterizada pela alteração no pH vaginal e substituição da microbiota normal do colo do útero, especialmente em mulheres em idade reprodutiva, causando um quadro de vaginose bacteriana (VB). Devido ao interesse na saúde intima da mulher, atualmente um dos fatores mais comuns e recorrentes em mulheres sexualmente ativas é o quadro de VB e frequentemente o conjunto de sinais e sintomas intervêm no bem-estar feminino. Neste contexto, o objetivo deste trabalho foi comparar os achados macroscópicos e microscópicos de exames citológicos preventivos para o controle de câncer de colo uterino a partir do diagnóstico de GV em relação ao grupo com diagnóstico de Lactobacillus sp.. Este estudo é constituído pela análise do diagnóstico descritivo dos laudos do exame Papanicolaou de pacientes atendidas pelo Laboratório de Análises Clínicas da Universidade Evangélica de Goiás, nos anos de 2018 e 2019, resultando em uma amostra total 248 laudos. A análise macroscópica do conjunto de sinais e sintomas sugestivos de infecção sexualmente transmissível (IST) apresentou resultados estatisticamente significativos em laudos de GV, indicando que a presença dessa bactéria pode aumentar o risco de IST secundárias. Em relação ao aspecto do colo do útero alterado foi visualizado em maior frequência nos laudos das pacientes que apresentaram GV e entre os aspectos microscópicos houve diferença significativa entre os grupos em relação ao achado de citológico de lesão epitelial do colo do útero. A conscientização para exames regulares e periódicos se faz necessário, pois mesmo que aparentemente as mulheres estejam sadias o diagnóstico e início de um tratamento precoce podem ser de grande importância para evitar complicações futuras.
