Electrospinning technology was used to produced polyvinylpyrrolidone (PVP)-copper salt composites with structural differences, and their virucidal activity against coronavirus was investigated. The solutions were prepared with 20, 13.3, 10, and 6.6% w/v PVP containing 3, 1.0, 0.6, and 0.2% w/v Cu (II), respectively. The rheological properties and electrical conductivity contributing to the formation of the morphologies of the composite materials were observed by scanning electron microscopy (SEM). SEM images revealed the formation of electrospun PVP-copper salt ultrafine composite fibers (0.80 ± 0.35 µm) and electrosprayed PVP-copper salt composite microparticles (1.50 ± 0.70 µm). Energy-dispersive X-ray spectroscopy (EDS) evidenced the incorporation of copper into the produced composite materials. IR spectra confirmed the chemical composition and showed an interaction of Cu (II) ions with oxygen in the PVP resonant ring. Virucidal composite fibers inactivated 99.999% of coronavirus within 5 min of contact time, with moderate cytotoxicity to L929 cells, whereas the virucidal composite microparticles presented with a virucidal efficiency of 99.999% within 1440 min of exposure, with low cytotoxicity to L929 cells (mouse fibroblast). This produced virucidal composite materials have the potential to be applied in respirators, personal protective equipment, self-cleaning surfaces, and to fabric coat personal protective equipment against SARS-CoV-2, viral outbreaks, or pandemics.
Nos últimos anos, o mercado de alimentos processados mudou em relação ao perfil de comportamento dos consumidores devido a busca de opções alimentares mais saudáveis. Assim, está se tornando cada vez mais comum que pesquisadores e profissionais do ramo alimentício estudem e elaborem novos produtos processados possibilitando ao consumidor a oportunidade de adquirir alimentos que combinam praticidade com uma expectativa de vida mais saudável. Dentre os alimentos processados, é possível destacar os produtos cárneos que são considerados uma excelente fonte de proteínas com alto valor biológico. O hambúrguer é definido como um produto cárneo processado, obtido através da carne moída dos animais de açougue, podendo conter em sua composição ingredientes opcionais, tais como, gorduras, água, sal, proteínas e entre outros. A utilização de carne de frango em hambúrgueres, pode ser uma alternativa mais saudável para o consumo desse produto, podendo, ainda, ser adicionado à formulação, ingredientes funcionais como as fibras alimentares que contribui positivamente para a saúde dos consumidores. Portanto, considerando o desenvolvimento de novos produtos cárneos adicionados de ingredientes funcionais, o presente trabalho teve como objetivo desenvolver um hambúrguer de frango com adição de farinha de aveia, farinha de batata doce e farinha de rosca, e avaliar os parâmetros físicos e físico-químicos e as propriedades tecnológicas do produto desenvolvido. Foram desenvolvidas três formulações de hambúrgueres de frango com adição de farinha de aveia (HFA), de farinha de batata doce (HFB) e de farinha de rosca (HFR), e caracterizadas em termos de análise de pH, de cor (L*, a*, b*), textura (firmeza, mastigabilidade, coesividade, elasticidade e gomosidade) e propriedades tecnológicas (encolhimento e rendimento na cocção). A adição de farinha de aveia em hambúrguer de frango contribuiu para um pH maior, luminosidade mais clara, tonalidade mais vermelha, maiores valores de firmeza e mastigabilidade e menor valor de porcentagem de encolhimento. Com isso, é possível concluir que a produção de hambúrgueres de frango adicionado de farinha de aveia é uma alternativa para melhorar as características do produto e oferecer uma alternativa mais viável para o desenvolvimento de novos produtos cárneos processados. No entanto, outras abordagens como análise sensorial e outras análises físico-químicas podem ser importante para estudar o comportamento dessas farinhas na estabilidade do produto melhorando essas formulações e propondo produtos mais completos.
