Objetivo: Descrever o processo de padronização do porcionamento de refeições oferecidas a crianças de uma creche, para adequação da oferta energética e controle do desperdício. Métodos: Foram avaliados restos e sobras de alimentos do almoço, lanche e jantar, durante 11 dias, de uma creche em Aracaju-SE, que atende a 45 crianças entre oito meses e dois anos. Após os primeiros sete dias, implementou-se a padronização do porcionamento. Para tanto, realizou-se treinamento com trabalhadoras empregando quadros com foto e descrição da medida caseira das preparações. O tamanho das porções foi determinado considerando-se a recomendação energética para a faixa etária. Para padronização das medidas caseiras, foram empregados utensílios usados na creche. Após esta etapa, foram novamente coletados dados de restos e sobras de alimentos durante quatro dias. Resultados: Os percentuais médios de resto-ingestão, na primeira etapa, foram de 21% no lanche, 33% no almoço e 36% no jantar. Após a padronização do porcionamento, tais percentuais caíram para 14% no lanche, 16% no almoço e 15% no jantar. A adequação do valor calórico diário foi avaliada em três dias e variou de 63 a 106%. Os resultados demonstram clara importância da padronização do porcionamento para controle do desperdício e adequação da oferta energética em estabelecimentos produtores de refeições.Palavras-chave: Alimentação institucional. O objetivo do estudo foi avaliar a qualidade dos lanches enviados nas lancheiras de pré-escolares de uma escola, considerando a classificação NOVA. Foi realizado estudo transversal desenvolvido com 200 crianças de 2 a 6 anos de uma escola particular. Foram observados e registrados três dias não consecutivos dos alimentos trazidos de casa pelos alunos e, posteriormente, os alimentos foram divididos em quatro grupos: alimentos In Natura (IN) ou Minimamente Processados (MP), Ingredientes Culinários (IC), Alimentos Processados (AP) e Alimentos Ultraprocessados (UP). Os dados foram analisados descritivamente e foram realizados testes de Qui-Quadrado de Pearson, teste de U de Mann-Whitney e teste de mediana. Observou-se que 100% das crianças levaram alimentos ultraprocessados em algum dia avaliado, sendo que em 85,5% a frequência foi nos três dias observados. Apenas 39% levaram alimentos in natura ou minimamente processados. A mediana de alimentos IN/MP foi de 13 g, enquanto a de alimentos UP foi de 200g. Em relação à quantidade de energia e nutrientes, em média, as lancheiras avaliadas apresentaram 341 Kcal (836 Kcal valor máximo) e 236 mg de sódio (máximo 683 mg). Os resultados mostram que a qualidade dos lanches contraria as recomendações da literatura, quando a presença de ultraprocessados nas lancheiras se mostra expressivamente maior do que a presença de alimentos in natura ou minimamente processados.
Discussions on the health consequences of the consumption of ultra-processed foods (UPFs) are wide-ranging, but little has been addressed under systemic aspects, human rights, sovereignty and food and nutrition security, and socio-environmental sustainability. For this reason, the aim of this article was to analyze the systemic implications of children's access to UPFs. Secondary data from a cross-sectional survey conducted with pre-school students of two private schools in a capital city in the Northeastern region of Brazil were analyzed through the analysis of lunch boxes for three consecutive days. The most frequent UPFs had information about the manufacturing location, ingredients, and brand collected from their labels and subsequently studied. We noticed that most of the products were manufactured in other states, being transported for long distances, had little ingredient diversity, and belonged to sub-brands that conglomerate into “big players”. In this sense, we conclude that children are having their right to food violated and that access to UPFs by this public supports a hegemonic and unsustainable food system from a socio-environmental point of view that contributes to food and nutrition insecurity.
