Starches are important food biopolymers with gelling properties that are well explored by the food industry for texture and physical food characteristic control. Brazil contributes to a large part of the starches produced world wide, but the modified starches used are imported and expensive. The objective of this work was to develop a hydroxypropylated starch from cassava starch, at a lower price and in conditions in accordance with Brazilian reality. Dihydroxypropylstarch (DHPS) was produced with a less expensive and less harmful substituting molecule, chloropropylene glycol. DHPS physical chemistry properties, retrogradation and micro structural characteristics were studied and compared with native corn, cassava starches and a commercial hydroxypropylated (HPS) cassava starch, with an extensive use in the food industry. DHPS showed the highest values for swelling power and viscosity, low retrogradation and higher freezing-thawing stability, compared with HPS, cassava and native corn starches. The microstructure of DHPS remained unmodified when compared with commercial HPS. Retrogradation and physical chemistry properties are superior to DHPS, which would indicate its use in industrial food production.
Abstract:The immobilization of laccase (Aspergillus sp.) on chitosan by cross-linking and its application in bioconversion of phenolic compounds in batch reactors were studied. Investigation was performed using laccase immobilized via chemical cross-linking due to the higher enzymatic operational stability of this method as compared to immobilization via physical adsorption. To assess the influence of different substrate functional groups on the enzyme's catalytic efficiency, substrate specificity was investigated using chitosan-immobilized laccase and eighteen different phenol derivatives. It was observed that 4-nitrophenol was not oxidized, while 2,5-xylenol, 2,6-xylenol, 2,3,5-trimethylphenol, syringaldazine, OPEN ACCESSMolecules 2014, 19 16795 2,6-dimetoxyphenol and ethylphenol showed reaction yields up 90% at 40 °C. The kinetic of process, enzyme recyclability and operational stability were studied. In batch reactors, it was not possible to reuse the enzyme when it was applied to syringaldazne bioconversion. However, when the enzyme was applied to bioconversion of 2,6-DMP, the activity was stable for eight reaction batches.

DIVULGAÇÃO INTRODUÇÃOA habilidade das enzimas para atuarem como catalisadores já tem sido considerada por muitos anos, particularmente pela indústria farmacêutica [1][2][3][4] . A imobilização de enzimas é uma das técnicas mais importantes na aplicação de catálise enzimática para reações sintéticas em solventes orgânicos [5][6][7][8][9][10] . Por razões prática e econômica, é muitas vezes vantajoso usar enzimas imobilizadas visto que, com poucas exceções, elas são insolú-veis em solventes orgânicos 11 . Uma das grandes vantagens da imobilização é poder utilizar o catalisador repetidamente sem considerável perda da atividade catalítica 12 . Considerando a compatibilidade com a enzima, géis hidrofílicos têm sido frequentemente empregados como suportes enzimáticos. Às vezes, a enantiosseletividade é aumentada 12 . Alguns sistemas que já foram usados para imobilizar enzimas são Eupergit C 13 , celite 11,14,15 , quitosana e quitina 11 , agarose, Chromosorb e Sepharose 13,16,17 . A modificação de enzimas com polietilenoglicol que resulta em um pó solúvel em benzeno ou em hidrocarbonetos clorados, também tem sido empregada [18][19][20][21][22] . The fly ash of coal, generated in a thermoelectric plant, was used to synthesize zeolite by hydrothermal treatment with a sodium hydroxide solution. The zeolite synthesized was used as an adsorbent of metals (Fe and Mn) and of the methylene blue dye in water. The characterization of the zeolite showed that silicon oxide is the main compound in its composition, followed by aluminum, iron, sodium and calcium, which together correspond to more than 86% of its composition. These were used to investigate the kinetic parameters of adsorption and the isotherm of the metals and the methylene blue dye in aqueous solutions. Three kinetic models, pseudo-first order, pseudo-second order and intraparticle diffusion were used to predict adsorption rate constants. The adsorption kinetics of the dye and metals followed the pseudo-second order kinetics and reached equilibrium in 15 minutes with a 99% removal rate for metals, independently of the pH. The values of the diffusion constants (K2) for iron in pH 5, 7 and 8 were 1.3158; 1.3881 e 0.6053 mg.g-1.min-1 and for manganese 1.2511; 1.5239 and 1.4336 mg.g-1.min-1, respectively. For methylene blue, the removal rate was 90% and the constant (K2) value was 0.5437 mg.g-1.min-1. The studies showed the existence of different stages in the adsorption of the metals and the methylene blue dye in zeolite.
IntroduçãoOs ésteres são importantes compostos orgânicos, obtidos por síntese química (esterificação, transesterificação ou interesterificação) ou extraídos de alguns produtos naturais, utilizando-se solvente e meio adequado (ROBERTS; CASERIO, 1997). Suas aplicações comerciais são bastante difundidas, sendo que diversos processos de obtenção industrial desses compostos, encontram-se bem sedimentados no setor produtivo.A síntese de ésteres, de um modo geral, envolve reações que possuem velocidades bastante baixas, se forem realizadas sem a utilização de um catalisador adequado (ABBAS; COMEAU, 2003;SHAW;SHIEH, 2003). Assim, é necessário o emprego de catalisadores, sendo geralmente utilizados ácidos como o sulfúrico e o clorídrico ou bases como o hidróxido de sódio ou o hidróxido de potássio (ROBERTS; CASERIO, 1997). Por tratar-se de uma catálise homogênea, a purificação dos produtos da reação acaba tornando o processo oneroso, além de não gerar produtos com alto grau de pureza (COSTA et al., 2003;FERREIRA-DIAS; FONSECA, 1995;JESUS;SILVA, 2003).Estudos recentes vêm demonstrando que as enzimas, em particular as lipases, podem ser aplicadas na síntese de diversos ésteres (JESUS; SILVA, 2003;GANDHI, 1997;JOÃO;ZANELLA, 2000;DIAS et al., 1991;ŞEKEROĞLU;FADILOĞLU;İBANOĞLU, 2004;VIEIRA;LANGONE, 2006;OLIVEIRA et al., 2004).
