Las BP fueron elaboradas por el método de casting y posteriormente fueron determinadas la permeabilidad al vapor de agua (PVA), elongación al quiebre (EQ), resistencia a la tensión (RT), humedad y transparencia. Los resultados obtenidos indicaron que las BP con menores concentraciones de GBA mostraron propiedades más deseables con respecto a las demás formulaciones, ya que se producen BP con baja humedad y PVA. Además presentan elevados valores de EQ y son más transparentes. Estos resultados son realmente prometedores y sugieren la posibilidad de utilizar combinaciones terciarias de CMC, GX y GBA como una fuente de empaque biodegradable para aplicaciones alimentarias. Effect of Gellan Gum Addition on the Barrier and Physico mechanical Properties of Binary Biofilms AbstractThe aim of this study was to characterize physico mechanical and water vapor barrier of biofilms based on carboxymethylcellulose (CMC) and xanthan gum (XG), formulated with various concentrations of low acyl gellan (LAG). The biofilms, were prepared by the casting method and then the water vapor permeability (WVP), elongation at break (EAB), tensile strength (TS), moisture and transparency were determined. The findings indicated that biofilms with low concentrations of LAG showed more desirable properties when is compared with the others formulations, because they yields biofilms with low moisture and WVP. In addition, these biofilms had high values of EAB and were more transparent. Como objetivo de la presente investigación se evaluó la significancia estadística entre las necesidades de seguridad y protección establecidas por Maslow (1943) y el rendimiento académico y aprendizaje significativo en estudiantes universitarios de la facultad de ingeniería de la Universidad de Cartagena, Colombia. La muestra estuvo compuesta por cuatrocientos cincuenta (450) estudiantes de ingeniería entre los años 2018 y 2020. La técnica utilizada para medir el cumplimiento de las necesidades de seguridad y protección de Maslow (1943) fue la encuesta, ponderada en una escala dicotómica de 0 y 1. El rendimiento académico, se evaluó desde las dimensiones del rendimiento conceptual (conceptualización), procedimental (competencia para resolver problemas) y global (agrupa las notas parciales de interpretación conceptual y procedimental) definido por Santos & Vallelado (2013). El aprendizaje significativo de Ausubel (2002; 1983) se midió desde los tres tipos de aprendizaje significativo: el representacional, de conceptos y proposicional, haciendo uso de un instrumento construido a partir de la escala del aprendizaje estratégico y autorregulatorio de Weinstein & Mayer (1983). Con respecto a los hallazgos, al cruzar la variable dependiente necesidades de seguridad y protección de Maslow, con las independientes: rendimiento académico y aprendizaje significativo, se pudo constatar que no existe significancia estadística a un 95% de nivel de confianza en la muestra analizada entre las necesidades de seguridad y protección de Maslow y el rendimiento académico y aprendizaje significativo.
El objetivo de la presente investigación consistió en evaluar los aspectos sociodemográficos que inciden en el crecimiento poblacional de la ciudad de Cartagena de Indias, Colombia. La población objeto de estudio está representada por las universidades que operan en la ciudad; a la cual se aplicó un muestreo no probabilístico de tipo dirigido, con carácter intencional. Los criterios de inclusión, que determinan la selección de las unidades de observación fueron: profesores de planta, experiencia docente no menor a diez años, estudios de cuarto nivel, y haber nacido en la ciudad de Cartagena de Indias. La técnica utilizada para recolectar la información, fue la observación mediante encuesta y el instrumento lo constituyó un cuestionario auto administrado conformado por 14 preguntas cerradas ponderadas en una escala Likert del 1 al 3. La inmigración fue caracterizada mediante cinco descriptores, la emigración con seis y el crecimiento natural de población con tres. Con respecto a los hallazgos, se logró comprobar que dos de los aspectos sociodemográficos que más inciden en el crecimiento poblacional de la ciudad de Cartagena de Indias son la inmigración (81,30%) y el crecimiento natural de población (84,50%) mientras que la emigración, no resultó representativa, aunque el porcentaje de relación fue medianamente alto (73,50%), no alcanzó la alta relación.
El objetivo del presente estudio fue investigar el uso de mezclas de α-pineno (PN) y extracto de arándanos (EA) en recubrimientos y evaluar sus efectos en la calidad postcosecha de fresas durante almacenamiento (12 días). Los recubrimientos fueron elaborados a base de gelana de bajo acilo (GBA) conteniendo EA (50 mg/mL), PN (300 µL/L). Los resultados mostraron que los recubrimientos disminuyen significativamente la pérdida de peso de las fresas. La presencia de EA redujo los valores de ΔE en las fresas recubiertas, ya que al final del almacenamiento, las fresas recubiertas (0.0PN/100EA) tuvieron valores de 7.45 y las fresas sin recubrimiento de 17.77. La incorporación de PN en los recubrimientos disminuye el crecimiento de Penicillium spp. En conclusión, los recubrimientos a base de GBA conteniendo mezclas de EA y PN pueden ser utilizados en la conservación de fresas debido a que evitan el crecimiento de hongos sin disminuir la calidad postcosecha de las fresas.
Colombian hawthorn yam is a well-known edible food and pharmaceutical industry of interest for its components. This study aimed to obtain Colombian Hawthorn yam flour (CHYF) and characterize its proximal composition, physicochemical, and rheological properties. The identification of chemical composition by proximal and FTIR analysis; also, steady shear test, stress test, frequency sweep, temperature sweep and pasting properties analysis were done. CHYF has a high carbohydrate content (80.47 ± 1.14%) and different functional groups (C = O, COO, N–H and O-H). Flour particles (27µm to 43µm) have spherical-oval morphology with a smooth surface; also, the sample resent a non-Newtonian fluid type shear-thinning adjusted to the Power Law model (R2 > 0.99); and a typical strong gel material when storage modulus G' was higher than loss modulus G''. CHYF shows the highest paste temperature at 81.6 ° C with a PV of 750 cP. Then, it is a potential source of natural ingredients with technological properties for the food industry and the food sovereignty of many countries in the world.
