El uso de fuentes convencionales en la producción de la energía eléctrica está provocando impactos ambientales que serán significativos en un futuro muy cercano debido a las emisiones de gases de efecto invernadero. Por ello, los gobiernos y entes regulatorios de los países están dispuestos a realizar la transición energética y optar por tecnologías renovables, las cuales minimicen las emisiones de estos gases. En los próximos años en Ecuador se proyecta la instalación de sistemas de generación distribuida para el autoabastecimiento sincronizado con la red de distribución bajo el marco normativo ecuatoriano. Este manuscrito tiene como objetivo segmentar a los consumidores regulados del sector residencial para distinguir posibles candidatos seguros a realizar inversiones en sistemas de generación distribuida. Para ello, se asume un modelo de análisis de rentabilidad que calcula los índices Tasa Interna de Retorno y Relación Beneficio Costo teniendo en cuenta; 1) las categorías de consumo de energía del usuario, 2) el costo regulado de la energía, 3) la producción proyectada y 4) incentivos fiscales, para 6 escenarios en el corto y mediano plazo. Los resultados obtenidos del modelo muestran que los usuarios con categorías de consumo elevados son los que muestran mejores índices de rentabilidad y, los usuarios con categorías de consumos bajos, índices no favorables. Permitiendo de esta manera segmentar el mercado y brindar alternativas a nivel de política pública para asegurar las inversiones en estos sistemas.
En busca de una solución tecnológica para aprovechar la merma de cebollas de variedad Granex 429, la cual es cultivada en las provincias centrales, específicamente en el distrito de Natá, se implementó el uso de está como materia prima en un producto alimenticio con valor agregado. Con el fin de desarrollar un producto innovador en el mercado, rentable y sin mayor complejidad para los productores de Natá, se elaboró la mermelada de cebolla, a la cual se le agregó trozos de manzana y piña, y así obtener dos productos. Según lo estudiado la cosecha de la cebolla se realiza cuando cumple de 100 a 130 días desde que se plantó. El tiempo que tarda en crecer una piña suele ser entre 10 y 14 meses y la manzana después de madurado el árbol, se puede tomar dos cosechas al año. Para ambos productos se realizaron pruebas fisicoquímicas: viscosidad, actividad de agua (Aw), pH, fibra, ceniza y °Brix, colorimetría; cuyos resultados serán detallados en el presente artículo. Además, se realizó un panel sensorial, con base en una prueba hedónica de 5 puntos, con 60 participantes de diferentes edades y sexo, con el fin de conocer que producto es más aceptado por los consumidores en general. La innovación dentro de la ingeniería en alimentos es un punto crucial dentro de nuestro crecimiento como profesionales, por lo cual, se nos motiva a llevar a cabo diferentes ideas creativas y productos nuevos, aplicando también los conocimientos adquiridos para el análisis de estos productos; estos análisis van desde análisis fisicoquímicos hasta análisis sensoriales y de mercado lo cual, nos brinda a futuro un resultado real del comportamiento del producto en todos los aspectos mencionados.
