En busca de una solución tecnológica para aprovechar la merma de cebollas de variedad Granex 429, la cual es cultivada en las provincias centrales, específicamente en el distrito de Natá, se implementó el uso de está como materia prima en un producto alimenticio con valor agregado. Con el fin de desarrollar un producto innovador en el mercado, rentable y sin mayor complejidad para los productores de Natá, se elaboró la mermelada de cebolla, a la cual se le agregó trozos de manzana y piña, y así obtener dos productos. Según lo estudiado la cosecha de la cebolla se realiza cuando cumple de 100 a 130 días desde que se plantó. El tiempo que tarda en crecer una piña suele ser entre 10 y 14 meses y la manzana después de madurado el árbol, se puede tomar dos cosechas al año. Para ambos productos se realizaron pruebas fisicoquímicas: viscosidad, actividad de agua (Aw), pH, fibra, ceniza y °Brix, colorimetría; cuyos resultados serán detallados en el presente artículo. Además, se realizó un panel sensorial, con base en una prueba hedónica de 5 puntos, con 60 participantes de diferentes edades y sexo, con el fin de conocer que producto es más aceptado por los consumidores en general. La innovación dentro de la ingeniería en alimentos es un punto crucial dentro de nuestro crecimiento como profesionales, por lo cual, se nos motiva a llevar a cabo diferentes ideas creativas y productos nuevos, aplicando también los conocimientos adquiridos para el análisis de estos productos; estos análisis van desde análisis fisicoquímicos hasta análisis sensoriales y de mercado lo cual, nos brinda a futuro un resultado real del comportamiento del producto en todos los aspectos mencionados.
En la búsqueda de mejorar diferentes aspectos de vida; acceder a alimentos sanos y cada vez más naturales, así como conformar sistemas de comercio alternativos, se hace necesario para el desarrollo sostenible. Durante el periodo agrícola 2020-2021, la producción de cebolla nacional alcanzó los 484,255 quintales, un aumento de 54.3% comparado con el periodo anterior (2019-2020), según cifras de la Dirección de Agricultura del Ministerio de Desarrollo Agropecuario en Panamá. Este trabajo tiene como objetivo elaborar una propuesta viable de un producto innovador, bases concentradas, utilizando la cebolla de producción panameña. Para el desarrollo de estas bases concentradas se realizó la formulación, el diseño del proceso, determinación de parámetros fisicoquímicos, elaboración del etiquetado nutricional y análisis sensorial. Los resultados muestran que las bases concentradas preferidas por el panel sensorial fueron la base concentrada de cebolla ahumada y ajo y la base concentrada de sofrito panameño. En cuanto a los parámetros fisicoquímicos se encuentra diferencia en los resultados de pH, Aw, ° Brix y viscosidad esto para la base concentrada de cebolla ahumada y ajo y la base concentrada de sofrito panameño, esto debido a la inclusión de pasta de tomate y achiote a la base concentrada de sofrito panameño. En conclusión, la utilización de la cebolla como ingrediente principal logró resaltar a nivel sensorial, esto debido a la utilización de transformaciones asociadas al proceso de ahumado.
