Die bei der Oxydation (100" his ZOO" C ) von Tricapronin und Tripalmitin entstehenden Ketone und Aldehyde werden in Form ihrer 2,4-Dinitrophenylhydrazone isoliert, diinnschichtdiromatographisch getrennt und UV-spektralanalytisch quantitativ erfaDt.
Formation of Ketones and Aldehydes During the Oxidation of Saturated Triglycerides at High TemperaturesKetones and aldehydes which are formed during the oxidation of tricaprin and tripalmitin were isolated as 2,4-dinitrophenylhydrazones, separated by thin-layer chromatography and quantitatively analysed by UV-spectrometry.
Mono‐ und Diglyceride verhalten sich bei der spontanen Autoxydation von Ölsäuremethylester bzw. Ölsäure indifferent. Sie zeigen bei ihrer metallkatalysierten Autoxydation sowie der einer wäßrigen Ölsäureemulsion eine Hemmwirkung nicht, d. h. sie sind auch keine Metallfänger.
Die während der Oxydation von Sonnenblumenöl und Schweineschmalz bei hohen Temperaturen (bis zu 200 °C) gebildeten Carbonylverbindungen werden aus dem Unverseifbaren als 2,4‐Dinitrophenylhydrazone isoliert, dünnschicht‐ bzw. papierchromatographisch differenziert und spektralanalytisch bestimmt.
Die durchgeführten Untersuchungen zeigen, daß unter den gewählten Versuchsbedingungen das Verhältnis der entstandenen Aldehyde zu den Ketonen etwa bei 3:1 liegt.
Es wird fiber eine Arbeitsweise berichtet, die es ermoglicht, Methylketone in naturlichen Fetten nach Abtrennung mit dem Unverseifbaren in Form ihrer Dinitrophenylhydrazone papierchromatographisch zu differenzieren und nach Elution vom Papier-Chromatogramm photometrisch mit befriedigender Genauigkeit quantitativ zu bestimmen.

Diese Verbindungen konnen durch mikrobiell ausgeloste desmolytische Vorgange aus Fettsauren entstehen oder aber durch Hitzebehandlung aus bestimmten Fetten (z. B. Butterfett) infolge Zersetzung der dort vorhandenen 0-Ketofettsauren unter Kohlendioxid-Abspaltung gebildet werden ' . AuBerdem ist eine Methylketonbildung auch aus den bei der Autoxydation von Fetten entstehenden Primarprodukten moglich 4. Die auaerordentlich geruchs-und geschmacksintensiven Methylketone 5-H -K. Taufel und R. ZimmermannQ geben z. B. als Schwellenwert fur Methylheptylketon lo-* g/l ml Wasser ansind in bestimmten Kasesorten (Roquefort, Gorgonzola u. a.) wertsteigernde Bestandteile, wahrend sie in Butter und Margarine beispielsweise als wertmindernd angesehen werden.Dem Nachweis und der quantitativen Bestimmung von Vertretern dieser Verbindungsklasse kommen sowohl praktische als auch theoretische Bedeutung zu. Ziel der vorliegenden Arbeit ist es, fur die in den Fetten meist nur in sehr geringer Menge vorliegenden Methylketoneunter Ausklammerung eleganter, aber zeitlo bzw. apparativ aufwendiger Verfahren (z.
