~ber das Verha]ten der Kuhmilch-Peroxydase beim Erhitzen der Milch sind schon zahlreiche Arbeiten verfffentlicht worden. ]~eistens stellte man sich dabei die Frage: Bei welcher Temperatur verliert das Enzym seine Wirksamkeit? eine Frage, welche deshalb wichtig war, well man sich bestrebte, die empfindlichea un4 charakteristischen Reaktionen der Peroxydase fiir die Beurteilung des Erhitzungsgrades yon pasteurisierter Milch zu verwenden. Eine befriedigende Ubereinstimmung aber wurde bis ietzt nicht erhatten. So z. B. gibt Storch 1) an, dab das Enzym nach einer Erhitzung auf 75 ° w~hrend 2 Minuten noch nicht getftet ist; er gibt als obere Temperaturgrenze 79-80 o C an. L elf man u2) ~and noch wirksames Enzym nach einer Erwi~rmung bis 76,5 °, nieht aber nach einer Erhitzung bis auf 82 o C. Utz a) bekam nach einer kurzen Erwiirmung der Milch auf 70 o noch eine deutliche, bei 80 ° eine sehwache und bei 90 o eine negative Peroxydasereaktion, w~ihrend auch nach li~ngerer Erwiirmung auf 70 o kein wirksames Enzym mehr gefunden wurde. SeHgmann 4) land nach Erhitzung fiber 75 ° C keine wirksame Peroxydase mehr. Bru~re 5) gibt 79 o C als obere Temperaturgrenze an, w~hrend ]~ullmann s) nach einer halbstfindigen Erhitzung auf 720 innerhalb 10 Minuten keine wahrnehmbare Reaktion bekam. Demgegenfiber erhielten d e J o n g und d e G r a a f 7) innerhalb 10 Miuuten eine positive Peroxydasereaktion bei Milch, welche sehr schnell his auf 86 o C erhitzt worden war. Koning s) bekam eine schwache Reaktion nach einer Erw~irmung der Milch w~hrend 1/2 Stunde auf 73 o C und 45 Minuten auf 720 C, dagegen eine negative Reakfion, wenn er die Milch 1/2 Stunde ]ang auf 74 o erhitzte.
