<p>El objetivo del presente estudio fue detectar la frecuencia de<strong> </strong><em>Salmonella </em>sp, mediante técnicas de aislamiento, en carcasas porcinas destinadas al consumo humano. Se muestrearon 300 carcasas beneficiadas en dos camales de Lima Metropolitana, Perú. Las muestras fueron tomadas mediante hisopados sobre la piel de la cabeza, vientre, lomo y pierna, representando en total 1200 submuestras. Estas fueron transportadas al laboratorio en tubos Falcon con agua peptonada tamponada, donde fueron procesadas, siguiendo el protocolo de aislamiento bacteriano basado en la norma ISO 6579:2002. Los aislados fueron identificados mediante pruebas bioquímicas y antisueros específicos. En el 6.3 ± 2.4% (19/300) de las carcasas y en 1.8% (21/1200) de las submuestras se detectó la presencia de <em>Salmonella </em>sp. El mayor porcentaje de aislados se obtuvo de la piel de la cabeza (33.3%, 7/21) y vientre (33.3%, 7/21). Los aislados fueron serotipificados e identificados como <em>Salmonella enterica </em>subesp. <em>enterica </em>serotipo Derby. Los resultados confirman la necesidad de implementar medidas de control y detección de la bacteria que permitan reducir la frecuencia de carne de cerdo contaminada que llega al consumidor.</p>
RESUMENEl presente estudio tuvo por objetivo determinar la frecuencia de residuos de antibióticos en leche de vacas luego del periodo de descarte (tres días) de leche por tratamiento contra la mastitis con antibióticos betalactámicos. Muestras de leche de 60 vacas se analizaron mediante la prueba inmunoenzimática SNAP (Betalactam), que indica la presencia de antibióticos betalactámicos en leche. El 45.0% (27/60) resultó positivo a residuos de antibióticos. En relación al tipo de antibiótico utilizado, el 56.0% (14/25), 26.7% (4/15) y 45.0% (9/20) de las muestras de animales tratados con la asociación penicilina y estreptomicina, kanamicina y penicilina, y amoxicilina y ácido clavulónico, respectivamente, fue positiva a la prueba. Asimismo, el 50.0% (14/28) de los animales tratados por vía intramuscular y 40.6% (13/32) por vía intramamaria fueron positivos; y el 46.7%(7/15), 57.1% (12/21) y 33.3% (8/24) de las vacas de baja, media y alta producción, respectivamente, fue positiva a la prueba; aunque sin que hubiera una asociación estadística entre el tipo de antibiótico, vía de administración, y nivel de producción con la presencia de residuos de antibióticos. En el presente estudio se, observó la persistencia de la inmunidad pasiva en porcinos procedentes de madres seropositivas a Actinobacillus pleuropneumoniae desde el destete hasta el final del periodo de recría en una granja tecnificada de Ica. Se colectó una muestra de sangre a 30 lechones a los 17, 42 y 73 días de edad, correspondientes al destete, y mitad y final del periodo de recría, respectivamente. El suero se analizó con una prueba de ELISA indirecta que detecta anticuerpos contra la toxina ApxIV. Todos los lechones fueron positivos a la presencia de anticuerpos maternales en el día 17 de edad, en tanto que el 56.7 y el 46.7% de los lechones resultaron positivos a los 42 y 73 días de edad, respectivamente. Existió diferencia estadística entre las medias de los niveles de anticuerpos para los días 17 y 42, y 17 y 73 (p<0.05), pero no hubo entre los días 42 y 73. El nivel de anticuerpos fue bajo al final de la etapa de recría.
RESUMENEl objetivo del estudio fue detectar la presencia de anticuerpos contra Lawsonia intracellularis, en granjas tecnificadas de los departamentos de Ica, Arequipa, La Libertad y Lambayeque. Los anticuerpos fueron detectados mediante la prueba de Inmunofluorescencia Indirecta (IFI). Se evaluaron 293 animales en varias etapas de producción. El 5.5 ± 0.6% de los sueros analizados fueron positivos a L. intracellularis, habiendo el mayor porcentaje de serorreactores en el departamento de La Libertad (14.6%), y la etapa productiva más afectada fue la de hembras reproductoras (23.1%). Los resultados demuestran que la L. intracellularis es un agente etiológico de enteritis que afecta a la industria porcina en el Perú. The antibodies were detected using the Indirect Immunofluorescence Antibody Technique (IFAT) in serum samples of 293 animals in five different age groups. La Libertad department was the most affected (14.6%) and female breeders were the most affected age group (23.1%). Positive results were found in 5.5 ± 0.6% of the samples. The results showed that L. intracellularis is an enteric ethiologic agent that affects the commercial swine production system of Peru.
