Para que as organizações tenham crescimento estratégico e competitivo, é necessário que os recursos sejam eficientemente administrados. A Teoria das Restrições (TOC) possibilita, através de suas etapas, identificar, controlar e gerenciar os gargalos, sejam eles físicos ou não físicos, que limitam processos da organização. O objetivo do estudo foi descrever e analisar a implementação da TOC para um gargalo não físico – modelo de previsão de demanda para a linha refrigerada – de uma indústria de laticínio de Minas Gerais. A pesquisa foi realizada com cunho descritivo, mediante um estudo de caso. Por meio de alguns indicadores de performance, como o shelf life da cadeia e ruptura houve uma melhora significativa no processo de 41% e 8,3%, respectivamente, de 2015 para 2018. Já os indicadores de cobertura de estoque e venda com data crítica, embora tenham sofrido uma queda menor na performance, também obtiveram resultados significativos, de 4,5% e 2,3%, de 2015 para 2018, respectivamente. Constatou-se, então, que a organizaçãoobteve resultados positivos e significativos na performance desde a fábrica até os centros de distribuição.
