This was the first study evaluating the impact of cold pre-fermentative maceration using refrigeration on the nutraceutical quality and color of red sparkling wines elaborated with the cultivar Syrah, and the evolution of these variables with different autolysis times. The sparkling wines were elaborated using the traditional method with different maceration times (NM, 24 and 72 h) and aging on lees (3 and 18 months of autolysis). In the sequence, it was conducted the characterization of the phenolic compound profile by HPLC–DAD ( n = 21), the antioxidant capacity (ABTS, DPPH, and FRAP assays), and the color (CIELab and CIEL*C*h systems). The total phenolic content (TPC) and antioxidant capacity (AOX) were higher with longer maceration (M72) and autolysis (18 months) times, reaching 453.54 mg L −1 of TPC, and AOX above 2.11 mmol TEAC L −1 by the three in vitro assays conducted. Cis -resveratrol, kaempferol-3- O -glucoside, quercetin-3-β- d -glucoside, isorhamnetin-3- O -glucoside, and petunidin-3- O -glucoside showed a good correlation ( r > 0.8; P < 0.05) with the antioxidant capacity and were found in higher concentrations in the sparkling wines elaborated with maceration. In addition, maceration promoted a more intense red (a*) and saturated (C*) color. Thus, the results indicated that cold pre-fermentative maceration and autolysis positively influenced the bioactive potential and the color of the red sparkling wines. A região do Submédio do Vale do São Francisco (SVSF) é a segunda maior região produtora de vinhos elaborados com as cultivares Vitis vinífera L. do país, na qual a variedade Syrah destaca-se como a mais utilizada na região para a elaboração de vinhos tintos. Os vinhos elaborados com essa cultivar dispõem de alta capacidade de amadurecimento, para isso, avaliou-se o efeito da utilização de chips de carvalho francês de média tostagem na composição físico-química e colorimétrica de vinho tinto ‘Syrah’ elaborado no SVSF. Foram testados dois tratamentos, um controle (sem utilização de chip) e o outro utilizando chip de carvalho francês de média tostagem (6 g L-1). Os parâmetros avaliados foram: pH, acidez total e volátil, açúcares redutores, densidade, dióxido de enxofre livre e total, teor alcoólico, extrato seco, índice de polifenóis totais (IPT), intensidade de cor, tonalidade, e análise colorimétrica pelo sistema CIELabe CIEL*C*h. Os resultados mostraram que a utilização de chip de carvalho francês pode contribuir para maiores estabilidades microbiológica e da cor dos vinhos em razão do menor valor de pH encontrado. Evidenciou-se que a utilização de chip influenciou significativamente nos parâmetros inerentes à cor, obtendo-se maior índice de polifenóis totais no vinho com emprego do chip de carvalho francês.
A vitivinicultura tropical tem se expandido nos últimos anos, graças a cultivares adaptáveis ao clima, possibilitando à região do Submédio do Vale do São Francisco ser a segunda maior produtora de vinhos finos do Brasil, com destaque para cultivar Syrah, com boa adaptabilidade e elevados vigor e produtividade. Uma forma alternativa para a elaboração de vinhos utiliza ânforas, recipientes cerâmicos porosos revestidos com diferentes materiais, possibilitando a obtenção de vinhos diferenciados devido ao contato durante a fermentação. O presente trabalho tem como objetivo avaliar a influência do uso de garrafões de vidro e talhas de barro, na composição físico-química e fenólica de vinhos tintos Syrah elaborados no Submédio de Vale do São Francisco. Foram testados dois tratamentos, uma vinificação em garrafões de vidro e o outro vinificação em talhas de barro. Os parâmetros avaliados foram: pH, acidez total e volátil, açúcares redutores, teor alcoólico, índice de polifenóis totais (IPT), intensidade de cor, tonalidade, compostos fenólicos isolados e antocianinas monoméricas totais. Os resultados mostraram que não houve variação significativa entre os tratamentos estudados com relação aos parâmetros físico-químicos e colorimétricos, ficando os resultados dentro do estabelecido na legislação. As diferenças significativas encontradas entre os compostos fenólicos isolados e antocianinas monoméricas totais não influenciaram negativamente nos padrões da qualidade do vinho.
A junção entre vinho e comida é denominada harmonização e, esta prática proporciona a combinação dos sabores, favorecendo contemplar alimentos e bebidas com maior equilíbrio, sem que os sabores se sobreponham, desta forma garantindo apreciar as principais características de ambos. O presente trabalho tem como objetivo aplicar a otimização linear na harmonização de pratos e vinhos regionais do Submédio Vale do São Francisco. Foi realizado o levantamento de oito vinhos e dez pratos, buscando-se avaliar as relações entre algumas comidas e vinhos da região. Atribuiu-se notas de 1 a 5 para as harmonizações, classificando-as como ‘sem harmonia’, ‘refresco’, ‘neutro’, ‘boa harmonização’ e ‘correspondência sinérgica’, supondo-se a situação em que cada prato e cada vinho só poderia ser harmonizado uma vez, sem repetição. Para isto, utilizou-se uma ferramenta de otimização matemática para obter um resultado ótimo para uma situação com mais de um milhão de possibilidades diferentes de escolha. Os resultados para o problema da melhor escolha entre vinho e comida obedecem às regras de harmonização existentes, tornando-a mais eficiente e mostrando que a aplicação matemática tem a possibilidade de resolver um problema real.
