RESUMOO hidromel é considerado a bebida mais antiga que se conhece elaborada de forma artesanal e em pequena escala. Sendo uma bebida pouco conhecida e explorada no Brasil, o presente estudo busca gerar informações científicas acerca da produção e caracterização de hidromel de modo a contribuir com a comunidade científica além de fornecer subsídios para o desenvolvimento do produto e agregação de valor à matéria prima, propondo uma nova oportunidade de negócio aos apicultores da região. O objetivo é produzir e caracterizar o hidromel tipo doce, quanto suas propriedades físicoquímicas e microbiológicas. O mel para o desenvolvimento do estudo foi adquirido na AGROUFAM. Para isso, variou-se as concentrações iniciais de sólidos solúveis totais (SST) em 20, 25 e 30 °Brix. O produto final foi caracterizado através de análises físico-químicas e microbiológicas. Os resultados demonstraram que as amostras analisadas asseguravam que o produto final estava fora de contaminação e estava com os parâmetros de acordo com a legislação brasileira. O acompanhamento da cinética de fermentação do mel permitiu inferir que o tempo ótimo para realizar o processo é de em torno de 10 dias, obtendo-se um teor de sólidos solúveis totais próximo a 14 °Brix e teor alcoólico dentro da legislação vigente (4 e 14% v/v). As três concentrações de °Brix parecem ser adequadas para produção de hidromel, no entanto, elas diferem quanto ao teor alcoólico e a acidez total, produzindo bebidas ligeiramente diferentes.

ABSTRACTThe mead is considered the oldest drink known to be made on a small scale. Being a little known and explored beverage in Brazil, this study aims to generate scientific information about the production and characterization of mead in order to contribute to the scientific community and provide subsidies for product development and adding value to the raw material, proposing a new business opportunity to beekeepers in the region. The objective is to produce and characterize the sweet type mead, as well as its physical-chemical and microbiological properties. The honey for the development of the study was acquired at AGROUFAM. For this, the initial concentrations of total soluble solids were varied at 20, 25 and 30 °Brix. The final product was characterized by physical-chemical and microbiological analyses. The results showed that the analyzed samples ensured that the final product was out of contamination and met the parameters according to Brazilian legislation. The monitoring of the kinetics of honey fermentation allowed us to infer that the optimal time to perform the process is around 10 days, obtaining a total soluble solids content close to 14 °Brix and alcohol content within the current legislation (4 and 14% v/v). The three concentrations of °Brix seem to be suitable for mead production, however, they differ in alcohol content and total acidity, producing slightly different beverages.
A elaboração da farinha de pescado do tipo “piracuí” a partir do jaraqui (Semaprochilodous taeniurus) que é um peixe culturalmente consumido na região Amazônica e possui um preço acessível. O peixe foi cozido nas temperaturas de 80 e 90°C e farinha com secagem a 50°C. Foram utilizados 10kg de jaraqui e com o processamento resultou em 6,746 kg de resíduo, que corresponde a 67,46%. Após o processo de obtenção da farinha de pescado tipo piracuí (cozida) o peso obtido foi de 1,126 kg, correspondendo a 11,26% da massa inicial do pescado. O baixo rendimento encontrado para o processo de obtenção da farinha de pescado tipo piracuí a partir de jaraqui cozido pode estar relacionada ao elevado teor de umidade. O piracuí apresenta pontos positivos quando comparado com o concentrado proteico de peixe tradicional, o que valoriza seu emprego local e alternativo em dietas especiais e em programas de suplementação alimentar. Com isso o objetivo do estudo é elaborar um concentrado proteico de pescado e calcular o rendimento do produto final.
