A folha de oliveira (Olea europaea L.), resíduo proveniente do processamento de azeite, constitui uma potencial fonte de compostos bioativos devido à considerável quantidade de compostos fenólicos que apresenta. Ao mesmo tempo, uma classe emergente de solventes, denominada deep eutectic solvents (DES) e descrita por muitos pesquisadores como green solvents, tem sido cada vez mais estudada dada as suas características de biodegradabilidade, segurança e capacidade de solvatação com diversos compostos orgânicos. O presente trabalho visou identificar os principais compostos fenólicos presentes na amostra através de Cromatografia Líquida de Ultra Eficiência (UPLC), na qual determinou-se a oleuropeína como composto fenólico majoritário, além de comparar a eficiência do uso de DES e de solventes comumente utilizados para a extração de tais compostos. O tempo de extração de compostos fenólicos da folha de oliveira foi avaliado a partir de uma cinética de extração e as condições otimizadas de temperatura e teor de água durante o processo, determinados por delineamento experimental.
