Latar Belakang : Diare merupakan salah satu penyakit infeksi penyebab kematian terbesar pada anak. Diare dapat disebabkan oleh ketidakstabilan mikroflora usus terutama pada anak. Ketidakstabilan mikroflora dapat diperbaiki dengan pemberian prebiotik berupa inulin. Inulin hasil ekstraksi dari umbi gembili dapat disubstitusi pada produk es krim sebagai alternatif makanan untuk meningkatkan sistem imun anak.Tujuan : Menganalisis perbedaan kadar protein, gula total, total padatan, viskositas dan nilai pH es krim dengan substitusi inulin.Metode: Merupakan penelitian eksperimental dengan satu faktor yaitu konsentrasi inulin (2%, 3%, dan 4%). Analisis yang dilakukan adalah kadar protein, kadar gula total, total padatan, viskositas dan nilai pH. Kadar protein, kadar gula total, viskositas dan nilai pH diuji menggunakan One Way Anova dilanjutkan uji LSD (Least Significance Different). Hasil : Es krim dengan substitusi inulin 4% dapat menurunkan kadar protein sampai 6,86%. Es krim dengan substitusi inulin 4% dapat menurunkan kadar gula total sampai 16,4%. Tidak ada perbedaan antar kelompok perlakuan pada total padatan es krim (p=0,198). Es krim dengan substitusi inulin 4% dapat meningkatkan viskositas sampai 7,28 dPas. Es krim dengan substitusi inulin 4% dapat menurunkan nilai pH sampai 6,4.Simpulan : Substitusi inulin berpengaruh terhadap penurunan kadar protein, kadar gula total, nilai pH, peningkatan viskositas es krim, dan tidak berpengaruh terhadap total padatan es krim.
