Tujuan penelitian ini adalah mengembangkan potensi protein kolagen yang terdapat pada kulit kaki ternak(kulit kaki ayam broiler/kka, kulit kaki kambing/kkk dan kulit kaki sapi/kks) menjadi produk gelatin dan mengkajipotensinya sebagai edible film. Ekstraksi protein pada kka, kks, dan kkk dalam water bath yang sebelumnyadicuring dengan asam asetat (1,5%) selama 3 hari. Dilanjutkan produksi edible film dalam 100 ml aquades denganperlakuan formulasi gelatin dan gliserol (1:0); (5:1); (10:1); (15:1) dan (20:1). Hasil penelitian menunjukkan bahwagelatin kks paling tinggi (P<0,05) kandungan proteinnya (85,17%) diikuti gelatin kkk (80,38%) dan kka (79,43%).Namun secara viskositas gelatin kkk (5,70 poise) paling tinggi (P<0,05) diikuti oleh kks (5,27 poise) dan kka (4,93poise). Hasil analisis FTIR menunjukkan bahwa gelatin jenis kks, kkk, dan kka terbukti sebagai gelatin melaluikarakterisasi serapan gugus fungsi. Karakterisasi tersebut terbagi dalam 4 bagian puncak serapan khas gelatinyaitu serapan amida A, amida I, amida II dan amida III. Kajian penggunaan jenis gelatin-gliserol dengan rasioberbeda menghasilkan viskositas edible film yang cenderung meningkat (P<0,05) dengan rentang rata-rata 1,89-3,77 poise. Sementara kandungan proteinnya nyata berbeda dengan nilai tertinggi pada rasio 10:1. Kandunganprotein edible dari gelatin kkk tertinggi (P<0,05) diikuti kka dan kks dengan nilai berturut-turut (0,38%; 0,27%dan 0,25%). Kesimpulan penelitian bahwa gelatin kks nilainya lebih tinggi diikuti kkk dan kka. Penggunaan ketigajenis gelatin ini sebagai edible film menghasilkan formula terbaik pada rasio 10:1 yaitu 10 g gelatin dan 1 ml gliseroldalam 100 ml aquades.
Tujuan penelitian ini adalah untuk mengidentifikasi sifat fungsional pada daun local jenis jati, kelor dan kayu manis dan mengevaluasi kemampuannya sebagai sumber antioksidan pada edible film berbasis gelatin dari kulit kaki ayam broiler. Metode penelitian dilakukan secara deskripsi dan pengujian kualitas edible dengan menggunakan Rancangan Acak Kelompok dengan 2 faktor. Faktor pertama yakni konsentrasi ekstrak daun lokal (0; 5; 10; 15 dan 20%) dan jenis daun lokal (Jati/J; Kelor/K dan Kayumanis/T). Hasil uji GC-MS (Gas Chromatography – Mass Spectrometry) menunjukkan bahwa kromatogram fraksi heksana terdeteksi 8 puncak pada daun jati dengan waktu retensi 3,057 menit sampai dengan 19,122 menit. Sementara pada kromatogram fraksi heksana pada daun kelor juga terdeteksi 8 puncak dengan waktu retensi antara 3,063 menit - 19,123 menit. Hasil kromatogram daun kayu manis dihasilkan 6 puncak dengan waktu retensi 11,011 menit – 19,353 menit. Secara keseluruhan jenis senyawa aktif dominan yang ditemukan pada ketiga jenis daun lokal tersebut adalah jenis fenol. Penambahan konsentrasi ekstrak daun local pada pembuatan edible film berbasis gelatin kulit kaki ayam broiler menunjukkan bahwa pH edible film pada konsentrasi 15-20 % paling tinggi dibandingkan dengan 5-10% namun lebih rendah dari pada kontrol. Kandungan protein edible berkisar antara 85,12-85,45% dan penambahan bahan antioksidan dari jenis daun lokal (jati, kayu manis dan kelor) meningkat pada penambahan 5% namun kemudian cenderung menurun jika prosentasenya ditingkatkan. Peningkatan konsentrasi ekstrak daun local cenderung meningkatkan kandungan fenol edible yang dihasilkan. Kesimpulan penelitian ini bahwa simplisia daun lokal memiliki sifat antioksidan dengan karakteristik berbeda baik pada daun jati, kelor dan kayu manis. Kandungan sifat antioksidan tertinggi ditemukan pada daun kayu manis, diikuti daun kelor dan terendah pada daun jati. Hasil uji GC-MS dibuktikan kandungan antioksidnnya dominan jenis fenol. Tahap formulasi ekstrak daun lokal ini dengan gelatin dari kulit ceker ayam broiler dihasilkan edible film dengan karakteristik berbeda, dan penambahan 15% ekstrak daun local dan diinteraksikan dengan gelatin dari kulit kaki ayam broiler menghasilkan edible film terbaik. Penelitian bertujuan untuk mengetahui efek marinasi ekstrak tepung batang kecombrang terhadap sifat fisik dan organoleptik daging broiler. Penelitian menggunakan rancangan acak lengkap (RAL) dengan empat perlakuan dan empat ulangan. Keempat perlakuan yaitu: daging ayam yang dimarinasi dengan ekstrak tepung batang kecombrang selama 0 jam (P0), daging ayam yang dimarinasi dengan ekstrak tepung batang kecombrang selama 1 jam (P1), daging ayam yang dimarinasi dengan ekstrak tepung batang kecombrang selama 3 jam (P2), dan daging ayam yang dimarinasi dengan ekstrak tepung batang kecombrang selama 5 jam (P3). Variabel yang diamati adalah susut masak, daya ikat air, pH, warna dan aroma. Hasil penelitian menunjukkan bahwa perbedaan lama marinasi daging ayam broiler dengan ekstrak tepung batang kecombrang berpengaruh nyata (P<0,05) terhadap susut masak, pH, warna dan nilai kesukaan panelis terhadap aroma, namun tidak berpengaruh nyata (P>0,05) terhadap daya ikat air. Kesimpulan dari penelitian ini adalah perlakuan lama marinasi 5 jam dengan ekstrak tepung batang kecombrang konsentrasi 6%, meningkatkan sifat fisik dan aroma subyektif filet daging ayam yang baik (susut masak 38,09%, daya ikat air 63,23%, nilai pH 5,17, aroma subyektif dengan skor 3,27 (suka), warna kecerahan (L) 41,2, warna kemerahan (a*) 6,07 dan warna kekuningan (b*) 18,86.
Gelatin Production of Bali cattle skin protein extract is an alternative to obtain permitted gelatin. The objective of the research was to know the effect of concentration and different acetic acid curing time to gelatin characteristic of the animal skin and to determine the best of the characteristic. Indicators of them were pH value, the yield of gelatin, moisture content, protein, fat, viscosity and gel strength. The extraction of Bali cattle skin protein was conducted with curing for 2; 4; and 6 days and acetic acid on concentration 2%; 4%; 6% and 8%. Statistical analyzed showed that increased of acetic acid concentration and curing time and its interaction was significant (P<0.05) affected the quality of the animal skin gelatin. Index of effectiveness showed that the best treatments combination was on acetic acid concentration 8% and curing time 6 days (A4C3) in produced gelatin. Indicator of quality were yield of gelatin (11.91%); water concentration (10%); protein (88.13%); fat (0.98%) and viscosity (5.35 cP). It can be concluded that the increase of acetic acid concentration and curing time affected quantity and quality of the animal skin gelatin.
This study was undertaken to analyze the quality of goat milk based cheese particularly its potential high antioxidant content through fortification of goat milk with purple sweet potato extract. A completely randomized design was used to determine the characterization of goat milk based cheese quality through five levels i.e. 0% (A); 2% (B); 4% (C); 6% (D) and 8% w/v (E) of purple sweet potato extract fortification in goat milk. The results showed that the increased level of fortification by purple sweet potato extract in goat milk based cheese significantly increased the pH value of the cheese (P<0.05) where the highest pH was 6.20 at the level of 4% w/v. Meanwhile, the yield and total of cheese acid were not affected by the fortification. The content of cheese protein significantly decreased (P<0.05) by the increasing level of fortification by purple sweet potato in goat milk. Goat milk-based cheese on the E treatment contained the lowest protein (19.42%). Functional potency of the cheese increased significantly (P<0.05) when the level of fortification was increased. The highest antioxidant content in goat milk based cheese was 114.47 mg/L. GAEAC at 8% w/v level. In conclusion, by increasing fortified goat milk by purple sweet potato extract up to 8% w/v was able to potentially produce cheese containing a high antioxidant.
