INTRODUCTIONSapodilla is a fruit from Central America that has adapted well in all regions of the Brazilian territory; however, it has stood out as a crop in the Northeastern region of this country because of its favorable edaphoclimatic conditions (GOMES, 2007). Despite its wide adaptation and acceptance in fruit markets, it is rare to find it outside tropical regions, partially because of its high perishability. The development of alternative, simple, and inexpensive methods to extend the conservation and marketing of these fruits is important, and osmotic dehydration is one of these methods. The main objective of this study was to determine the water and sucrose diffusion coefficients during the osmotic dehydration of sapodilla. This process was performed in short duration (up to 6h) to evaluate detailed information on water loss and solids gain kinetics at the beginning of the process and in long duration (up to 60h) to determine the equilibrium concentrations in sapodilla. Introdução: O rótulo tem por função orientar o consumidor sobre os constituintes dos alimentos e suplementos promovendo escolhas saudáveis. No entanto, isto não significa que os consumidores o estejam utilizando como uma ferramenta para a escolha dos alimentos ou suplementos que deverão compor sua dieta e, assim, reduzir os excessos alimentares e os danos ocasionados à saúde. Estudar suplementação com o ômega 3, como agente preventivo e de tratamento de doenças como possibilidades de suplementação disponíveis no mercado é de extrema importância, pois sua inclusão é essencial tanto no planejamento alimentar de indivíduos saudáveis quanto no daqueles que já apresentam algumas patologias, assim como orientar os consumidores e profissionais de saúde acerca da utilização, concentração e armazenamento adequado desses produtos. Objetivo: Este trabalho teve como objetivo avaliar as informações encontradas nos rótulos de suplementos de ômega 3, vendidos nas farmácias da Zona norte do Recife, PE, para verificar se estavam de acordo com a legislação vigente, garantindo que tanto os profissionais e consumidores tenham produtos de qualidade em relação a segurança higiênico sanitária, recomendações diárias e nutrientes adequados. Métodos: Foram selecionadas 18 marcas que são comercializadas nas lojas para a avaliação e a análise dos rótulos foi dividida em dois grupos: o primeiro estava relacionado às informações técnicas, o segundo foi referente às especificidades dos ácidos graxos. Conclusão: Ao final da análise dos rótulos de ômega 3, apenas dois apresentaram conformidade com todos os itens avaliados, porém, a maioria, apresentou algum tipo de irregularidade, mostrando a necessidade de uma severa e contínua fiscalização e de uma lei específica para a padronização dos ácidos graxos, tendo em vista que são comercializados de forma livre, necessitando de um monitoramento dos padrões exigidos pela Agência Nacional de Vigilância Sanitária (ANVISA), bem como uma exigência de certificação internacional a serem cumpridos, garantindo a proteção do consumidor. Logo verificou-se que 89% dos produtos apresentaram alguma inadequação quanto à legislação. Mas como a legislação vigente em relação à rotulagem é vasta, mas fragmentada, refletiu uma porcentagem de 11% dos produtos em relação aos rótulos que estavam conforme, mas os que que não estavam em conformidade podem trazer sérios riscos à saúde do indivíduo.
