INTRODUÇÃO: O envelhecimento populacional é uma das realidades, o que torna-se um desafio principalmente nos serviços de saúde onde essa população não tem a atenção e a valorização de que precisa. O idoso está sujeito a múltiplas comorbidades as quais potencializam a não terem independência e autonomia gerando fragilidade e incapacidade. O aumento dessa população vem trazendo muitas transformações nas precisões de saúde, pois o envelhecimento é um processo natural, mutável e gradual que levam as alterações morfológicas, físicas, bioquímicas e psicológicas. OBJETIVO: Mostrar qual a importância do cuidado humanizado ao idoso com hanseníase para melhor eficácia no tratamento diante dos impactos fisicos e sociais saúde-doença, que é de suma relevância para o idoso, principalmente, com hanseníase o que faz necessário que os profissionais de saúde tenham mais discernimentos e habilidades no desenvolvimento para estratégias mais qualificadas. METODOLOGIA: Projeto construído pela revisão integrativa da literatura. Para seleção dos artigos foram utilizadas as seguintes bases de dados: Scientific Electronic Library Online (SCIELO) e a via Biblioteca Virtual em Saúde (BVS), onde foi feito um entrecruzamento dos descritores: Saúde do Idoso e Hanseníase. Tendo como critérios de exclusão, os artigos que se apresentaram repetidos em mais de uma base e artigos pagos. RESULTADO E DISCURSSÃO: Diante das pesquisas, foram encontrados 35 artigos em proporções diversas nas bases de dados configuradas para o presente trabalho, entretanto, após análise de leitura exploratória e aplicabilidade dos critérios de inclusão e exclusão, apenas 12 artigos foram selecionados. Indentificando que mesmo com dificuldades as quais os profissionais sofrem, é importante que exista cuidado humanizado. CONCLUSÃO: A partir dessa exposição desse estudo o qual mostrou que diante dos impactos físicos e sociais saúde-doença também é preciso requerer cuidados paliativos mais contínuos juntamente com a família e, a necessidade do enfermeiro estabelecer prioridades, planejar e executar intervenções às características individuais, sociais e culturais favorecendo no cuidado humanizado na promoção, prevenção e proteção da pessoa idosa. O pulmão bovino, considerado como víscera, muitas vezes é descartado de forma inadequada no meio ambiente. No entanto, este órgão destaca-se por apresentar elevados teores de ferro e proteínas com alto valor biológico. Diante disso, o objetivo do presente estudo foi elaborar um produto enriquecido com ferro heme biodisponível. Foram elaboradas formulações de hambúrguer com diferentes quantidades de pulmão bovino. Nestes produtos foram determinados a composição centesimal e o teor de ferro. As amostras foram avaliadas sensorialmente por testes de aceitação e de intenção de compra do produto. Os dados obtidos foram analisados por meio da análise de variância e comparados pelo teste de Tukey (p<0,05). Os hambúrgueres produzidos com diferentes quantidades de pulmão apresentaram majoritariamente em sua composição água (67,9-68,16%), proteínas (18,16-19,05%) e lipídios (8,09-8,31%). O teor de ferro heme biodisponível variou entre 9,23 e 14,03 mg/100g entre as amostras, sendo aproximadamente três vezes maior na amostra com 100 g de pulmão, em relação à amostra controle. Os hambúrgueres formulados com adição de pulmão bovino foram aceitos pelos provadores (IA>70%) e apresentaram altas porcentagens de intenção de compra (>82%). O produto pode ser considerado uma alternativa promissora para a ingestão de ferro e de aminoácidos essenciais, que podem auxiliar no combate à anemia e reduzir as consequências causadas por esta carência no corpo humano, como déficit no desenvolvimento motor e cognitivo.
