This research aimed the development production of prophylactic whey drinks which allows enhancing the efficient use of resources of high-value dairy byproducts including cheese and curd whey. High level of safety and quality of milk supplied, soft, semi-hard cheeses and dry-curd cottage cheese, as well as curd whey were adapted. Pepper mint was added as a source of extra vitamins, mineral salts, macro- and micronutrients, dietary supplements. The first recipe for a whey drink with the addition of mint syrup includes curd whey 1 L, mint 1 g, sugar 30 g, water 25 mL, citric acid 4 g. The second recipe differs from the first in that peppermint contains 2 g, the third recipe for mint contains 3 g. The amount of whey, sugar and citric acid in the second and third recipes corresponds to the first recipe. Plant-based components of whey drink act as analeptics and expand the assortment. Also, the research aimed to develop zero waste and low waste technology for private and collective farms and agricultural holdings and as a result, provide the solution to whey disposal issue.
The dynamics of bioamines in platelets, neutrophils, lymphocytes and blood plasma of imported heifers indicated that experimental group of animals experience stress, which is accompanied by an adequate release of bioamines from the deposit sites: catecholamines - by 9.2-17.1%, histamine - by 2.2-6.1% and serotonin by 1.0-3.9% (P <0.05-0.001). Intramuscular injection of PS-7 and Prevention-N-C preparations to transported animals had a supportive effect on the formation of body biochemical adaptation mechanisms to the conditions of long-term transportation. After application of biopreparations the improvement of the reproductive traits of heifers of the 1st and 2nd experimental group was indicated the age of successful insemination was shortened by 1.35 and 1.53 months, the first calving age - by 1.0 and 1.2 months, the insemination index - by 1.42 and 1.93 times, the service period - by 8.8 and 12.2 days and increased fertilization after the first insemination by 1.7 and 2.0 times (P <0.05-0.01), rather than in the control. Heifers of the 1st and 2nd experimental group surpassed their peers of the control group in milk yield for 305 days of lactation by 109 and 125 kg (P <0.05), fat content by 0.16 and 0.27% and protein content by 0.04 and 0.07%.
One of the many environmental problems in the modern world is the disposal of production and consumption waste, including sewage sludge. The aim of our research was to study the content and accumulation of heavy metals in soil and carrots when using increasing doses of sewage sludge as fertilizer and its effect on the yield of products. Sewage sludge with a moisture content of 44.5% was introduced into gray forest soils. After fertilizing the soil, agrochemical analyzes of soil samples from the plots of the experimental plot for the content of heavy metals were carried out. We also studied the content of heavy metals in carrot biomass and its yield. It was found that the content of heavy metals in various variants of experiments with the use of sewage sludge increased. It was found that the dynamics of migration of heavy metals into the biomass of carrots correlates with an increase in their concentration in the soil and affects the yield of carrots.
Abstract. The aim of this study is to study the effectiveness of the use of various means for treating the udder of cows in order to prevent the incidence of mastitis and improve the quality of milk. Since in order to prevent the development of mastitis for a long time, it is necessary not only to destroy the disease itself and fight its symptoms, but also to take all kinds of measures to prevent the disease. Methods. To conduct a scientific and economic experiment, 4 groups were formed, of which 3 are experimental and 1 control, according to the method of pairs-analogs using a tethered method of keeping in stalls in all four groups. To treat the udder, agents based on iodine, chlorhexidine, chlorhexidine digluconate and probiotic bacteria were used. Results. The summer use of Priolit Vortex and Algavit Vortex in 1 experimental group showed a decrease in the number of mesophilic aerobic facultative anaerobic microorganisms in cow's milk from 200,000 to 97,000 CFU/cm3, which is 48.5 % less than at the beginning of the experiment. Treatment with disinfectants Priolit Vortex and Elovit Vortex in the 2 nd experimental group made it possible to reduce the number of mesophilic aerobic facultative anaerobic microorganisms by 68.4 %. The use of probiotic agents Skin Cleaner and PIP Cow Teat Cleaner for treating the udder of cows allowed to reduce the number of mesophilic aerobic facultative anaerobic microorganisms in the milk of cows in experimental group 3 from 180,000 to 110,000 CFU / in 1 cm3, which is 61.1 % less than the initial indicators. Somatic cells in the milk of cows of the 1st experimental group decreased from 750,000 to 120,000 in 1 cm3, in the 2nd experimental group the number of somatic cells decreased from 250,000 to 180,000 in 1 cm3, in the 3rd experimental group from 390,000 to 340,000 in 1 cm3. In the control group, an increase in the number of somatic cells was found by 84 %.
Cheese makers conduct research to improve the recipe and technology of cheese production. In Russia, the main raw material for cheese production is cow’s milk. The aim of the research is to study the cheese suitability of milk and to improve the technology for production of soft cheese ‘Academicheskiy’. The physical and chemical properties of milk were studiedby ultrasound method. The results of studies of milk quality were taken into account in developing the recipe and production technology of soft cheese. The cheese recipe included cow’s milk, sour milk whey and salt. Soft cheese was made by hand using a thermal-acid method. The production technology of soft cheese ‘Academicheskiy’ consists of the following operations: acceptance of milk and additional raw materials; processing and preparation of milk; pasteurization of milk and sour whey at high temperature; mixing of milk and sour whey for protein precipitation; molding and self-pressing; salting; drying and maturation; packaging and labeling; storage, transportation and sale of soft cheese.
The article describes the installation of microwave drying UMS-2-10, its use in agricultural enterprises. Installation of combined drying (microwave and convective heating). The installation was developed by the research and production Association "Gamma" in Nizhny Novgorod. The principle of operation is based on the use of microwave energy in combination with the circulation of "warm" air. It is established that when choosing a drying unit for the food industry, it is necessary to keep in mind that the scientifically justified choice of the design of the dryer intended for drying specific types of plant substrates containing biologically active substances is more dependent on the structural properties and biological composition of the plant raw materials used in production. Drying plant UMS-2-10 installation provides for the use of microwave, convective and combined methods of heating the feedstock; characterized by small size and ease of operation; has optimal performance, focused on the orders of commercial enterprises, and not on the formation of large batches of finished products, the implementation of which may be in doubt; characterized by high maintainability, low cost and tariffs for delivery, and installation of the dryer.
