Un aspect fondamental des molécules qui est généralement négligé de l'aromathérapie scientifique pourtant basée sur l'utilisation de la chimie des groupes fonctionnels. Cette mise au point tente d'apporter de l'information sur la stéréochimie moléculaire dans la composition des huiles essentielles (HE) et son impact sur leurs activités biologiques. Des notions de stéréochimie sont introduites et un nouvel éclairage est apporté avec de nombreux exemples sur les principales molécules composant les HE. L'importance du profil énantiomérique des HE est démontrée avec une évaluation plus précise des conséquences sur leurs propriétés biologiques.
