Introducción: La necesidad de alimentos nutritivos se ha incrementado por la demanda de un público exigente. Los consumidores, en la actualidad, desean aperitivos que además de satisfacer su apetito, aporten también nutrientes esenciales. Este trabajo tuvo como objetivo la caracterización físico-química de una barra alimenticia elaborada a base de semillas (girasol, ajonjolí, chía y linaza) y nueces (almendra, nuez de la India, corazón de nuez de pecana, pistache y nuez de Castilla entera) libre de componentes de origen animal, como leche de vaca en polvo, ovoalbúmina y/o grasas animales utilizados en barras alimenticias comerciales.Material y métodos: Los métodos de análisis próximo, valor energético, vida útil de la barra alimenticia y análisis sensorial y las pruebas de aceptación, se realizaron de acuerdo a métodos estándares de análisis de la Asociación de Químicos Analíticos Oficiales (AOAC por sus siglas en inglés). Todos los análisis se realizaron por triplicado a menos que se indicara de otra manera. Los resultados obtenidos fueron estadísticamente analizados con un 5 % de nivel de significancia para cada prueba.Resultados: Se analizó su composición próxima (27% proteína, 7,5% fibra cruda y 4,4% de azúcares). Estos valores posicionan a este producto dentro de las barras de alto contenido proteico con contenido en azúcar muy bajo si se compara con barras comerciales (20 – 40%). Presentó el 45% de lípidos con el 19% de aceites saturados y 81 % de insaturados, todos estos derivados de las nueces y semillas. Se cuantificaron minerales esenciales como: calcio, magnesio, potasio, sodio, cobre, hierro, manganeso y zinc. La velocidad de rancidez fue relativamente baja hasta alcanzar el valor máximo permisible de 10 meq/kg en peróxidos como valor de rancidez a los 9 días de almacenamiento a 40 °C. Conclusiones: Las barras alimenticias a base de semillas y nueces tuvieron una alta aceptación en pruebas sensoriales de preferencia por público adulto. De acuerdo con estos resultados se presenta un alimento de alto contenido proteico, nutricionalmente completo y estable al almacenamiento.
In Mexico, open dumps that are maintained by the municipality but provide no covering of waste are not uncommon. Further, disposal at these sites is often performed by burning. The aim of this study was to determine the leachate plume from an open dump located in a depositional deltaic environment, with arid climate, low rainfall and where the water table is about 2 m below the surface. The methodology comprised analysis of groundwater monitoring wells and geophysical and geochemical prospecting techniques. The 3D geoelectric interpretation shows a typical area of these depositional environments with low resistive values (10-20 X-m) associated with the presence of sands and clays interbedded. However, there is a very low resistivity zone associated with the dump's impact which reaches values below 5 X-m, and it is located where the disposal and burning of wastes occurred. Another zone with values above 16 X-m appears as a limit for the advance of the saline. This is interpreted as a sandy lenses area. These sandy lenses with higher porosity transport aquifer's water. Thus the dump is in direct contact by this conduct with clean groundwater. Piper diagrams constructed with the chemical data analysis reveal that the groundwater in the area corresponds to the chlorinated and/or sulfated sodium type, showing the impact caused by the dump. The monitoring well (NP8, on-site) with the highest dissolved solids content behaves anomalously and belongs to the more conductive zone according to the geoelectric profiles. The subsoil geochemical behavior is influenced by the seasonal water table variations provoking the dissolution of burned and unburned wastes, but the effects of slow flows in the direction of the regional flow are not discarded. Although the most impacted area within the dump is characterized to a depth of 10 m, there is a slow flow in the direction of the regional flow that has been moving pollutants out of the dumpsite during its almost 20 years of operation. The results of this study provide valuable information for the authorities to carry out an appropriate restoration project.
The water quality of the Mexicali Valley aquifer was evaluated in order to estimate the geochemical processes involved with the increase of its salinity and the subsequent subsoil mineralization. The study area is located in the municipality of Mexicali, Baja California, Mexico in a section where the riparian corridor of the Colorado River converges with an agricultural area. The water of this river contains less than 1000 ppm of dissolved solids on average, but as the water is channeled and used in the crop’s irrigation, it undergoes a solute enrichment process until 2400 ppm in the upper aquifer. According to chemical analyzes the water salinization is mainly caused by sodium, sulfate and chlorine ions, while the geochemical modeling carried out with the PHREEQC program indicates that the processes related to calcite precipitation, dolomite and gypsum dissolution and water evaporation are primarily responsible for the water chemical evolution in the area.
La contaminación provocada por metales pesados constituye uno de los grandes retos relacionados con la calidad del ambiente y la salud humana. La introducción de estos elementos en los sistemas naturales puede deberse a diversas actividades humanas entre ellas la agricultura y la disposición de residuos sólidos. En el valle de Mexicali, la agricultura representa la actividad económica más importante, sin embargo, el uso de agroquímicos, así como la disposición clandestina de residuos sólidos urbanos (RSU) han generado problemas de contaminación severos afectando la fertilidad de suelos y la calidad de las aguas subterráneas. El propósito de esta investigación consistió evaluar el contenido de metales pesados en diferentes fracciones de suelo a través de la zona vadosa (ZV) en un sitio ubicado en el Valle de Mexicali e influenciado por la agricultura y la disposición de residuos. Las muestras de suelo se sometieron al procedimiento de extracción secuencial y fueron analizadas mediante espectrometría de absorción atómica. Los resultados obtenidos revelan una marcada acumulación de metales desde la superficie hasta los primeros 50 cm de profundidad. Las variaciones estacionales del nivel freático, así como el riego agrícola favorecen el transporte de solutos observándose concentraciones de metales en el agua subterránea superiores a los estándares para agua potable. Los elementos Cd, Cr, Ni se distribuyen preferentemente en la fracción residual del suelo limitando así su movilidad. El Cu presentó una fuerte asociación con la materia orgánica en tanto que el Zn y Pb presentaron la mayor asociación con fracción intercambiable.
