O consumo da aveia tem apresentado benefícios à saúde humana em diversas situações, seja pela redução do risco de complicações de algumas doenças ou pela melhora no quadro das mesmas nos indivíduos. Este cereal é altamente produzido no Brasil e no mundo e sua utilidade se dá de diversas maneiras, podendo ser útil para o consumo humano ou animal e até mesmo para a fabricação de cosméticos. A aveia possui uma composição nutricional variada e repleta de nutrientes que apresentam benefícios à saúde humana, sendo eles compostos antioxidantes, fenólicos, b-glucana, boa quantidade de aminoácidos, fibras, e carboidratos. Essa composição nutricional tem apresentado variações de acordo com sua produção, processamento, tratamento térmico e consumo, sendo necessários mais estudos para avaliar estes efeitos na saúde humana. O objetivo deste trabalho foi realizar uma revisão bibliográfica de literatura, de característica retrospectia e descritiva, utilizando-se de dados à partir das bases de dados PUBMED, MEDLINE, Scielo e Google Acadêmico, sobre a produção deste cereal e seus diversos efeitos sobre a saúde humana através de seu consumo.
Resumo: Introdução: A carne, é consumida em todo território nacional, como sendo um dos principais aimentos do cotidiano do brasileiro, porém, frutas, vegetais e grãos em geral são consumidos muito abaixo do ideal. Em consequência disso, o consumo diário de fibras nem sempre é adequado, e ainda as gorduras industrializadas e o açúcar refinado em muitos casos são ingeridos acima do recomendado nos últimos anos no padrão da alimentação ocidental. Objetivo: Este trabalho procurou propor a adição da farelo de aveia em hambúrguer bovino, em vista que esse alimento é rico em fibras, ácidos graxos de cadeia média, e também em B-glucana, nutrientes que propõe a aveia o status de alimento funcional promovendo benefícios à saúde humana. Materiais e métodos: Foram desenvolvidas uma amostra padrão de hambúrguer bovino (HP), outra amostra com adição de 10% de farelo de aveia (HA10) e uma terceira amostra com a adição de 15% (HA15). Foi realizado o cálculo nutricional (kcal, carboidrato, lipídeos, proteína e colesterol). Posteriormente fora realizada análise sensorial, onde foram avaliados os atributos aceitação global, aparência, aroma, sabor e textura, por meio de uma escala hedônica estruturada de 9 pontos, também foi avaliado a intenção de compra por meio de uma escala estruturada de 5 pontos. Os dados foram avaliados estatisticamente por ANOVA e Tukey. Resultados: Em relação ao valor calórico verificou-se 163 Kcal(HP), 202,4 Kcal(HA10), 222,1 Kcal(HA15), para carboidratos verificou-se 6,66g(HA10), 9,99g(HA15), para lipídeos 7,8(HP), 8,65(HA10), 9,07(HA15), para proteína 21,6(HP), 22,99(HA10), 23,68(HA15) e para colesterol verificou-se 60mg. Verificou-se que houve diferença estatística (P=0,05) apenas para o atributo “Aparência”. As médias de aceitação global foram 7,6 ± 1,5(HP), 7,0 ± 1,6(HA10), 7,2 ± 1,7(HA15), para aparência 7,4 ± 1,3(HP), 7,1 ± 1,3(HA10), 6,8 ± 1,9(HA15), para aroma 7,5 ± 1,4(HP), 7,0 ± 1,3(HA10), 7,0 ± 1,8(HA15), para sabor 7,4 ± 1,9(HP), 6,8 ± 1,7(HA10), 7,0 ± 2,1(HA15), para textura 7,3 ± 1,8(HP), 6,6 ± 1,7(HA10), 7,0 ± 2,0(HA16) e para intenção de compra 4,0 ± 1,5(HP), 3,7 ± 1,3(HA10), 3,8 ± 1,4(HA15). Conclusão: Coclui-se que é possível elaborar um produto de hambúrguer bovino com a adição de farelo de aveia de boa aceitabilidade, sendo que os atributos avaliados não apresentaram diferença significativa perante a avaliação qualitativa dos provadores, exceto para o atributo “aparência” na amostra padrão(HP). Ressalta-se ainda que as amostras obtiveram uma boa média perante a avaliação dos provadores por uso da escala hidônica estruturada.
Vários são os fatores de risco para doenças cardiovasculares, como por exemplo: sobrepeso/obesidade, sedentarismo, estresse, fatores genéticos, hipertensão arterial, tabagismo, idade, diabetes mellitus, dislipidemias, dentre outros. A partir dessa prerrogativa, o objetivo do trabalho foi analisar a composição corporal e a incidência de doenças cardiovasculares ou doenças crônicas não transmissíveis associadas às mesmas, de indivíduos adultos internados em um hospital no oeste do Paraná. A pesquisa se utilizou de dados coletados de prontuários de pacientes de ambos os sexos, com idade entre 40 e 90 anos, que apresentavam doenças cardiovasculares ou doenças crônicas não transmissíveis. Além da incidência de doenças, os dados de composição corporal como peso, altura e dobras cutâneas, também foram coletados. Os resultados foram expressos por meio de estatística descritiva e quantitativa e analisados pelos testes de Shapiro-Wilk., Mann-Whitney-U, teste T, Qui-quadrado, ANOVA e pelo teste de Correlação de Spearman com o grau de significância de 5%. A maior incidência patológica nos indivíduos era de hipertensão arterial. Os resultados mostraram que quanto mais a idade avança, menor é o peso do indivíduo e também a circunferência do braço. Ainda, indivíduos com menor Estatura demonstraram possuir maiores valores de Prega Cutânea Tricipital. O índice de massa corporal e o peso apresentaram maiores médias para quem possuía até duas patologias associadas. No entanto, possuir uma ou mais patologias não diferiu entre indivíduos avaliados para estas variáveis. Essas doenças fazem parte das principais causas de morbidade e mortalidade no mundo e mudanças de peso e maior acúmulo de gordura corporal aumentam o risco para o seu acontecimento.
