O baru (Dipteryx alata Vog. família Fabaceae) é uma planta típica do cerrado cujo óleo extraído das sementes é usado popularmente como anti-reumático e regulador da menstruação. O interesse em avaliar fitoestérois em óleos vegetais deve-se a sua aplicação na prevenção de dislipidemias, de doenças cardiovasculares e à sua atividade na proteção contra tumores estimulados por estrogênio. O presente trabalho teve como objetivo contribuir com o conhecimento químico da espécie, de modo particular, em relação ao conteúdo em fitoesteróis livres e totais. Foi necessário desenvolver e validar um método analítico por CG-EM para a quantificação do ?-sitosterol livre no óleo de baru. A concentração dos demais fitoesteróis foi estimada utilizando suas áreas relativas no cromatograma. Para quantificar os fitoesteróis totais foi realizada uma saponificação branda do óleo, a temperatura ambiente, a fim de hidrolisar a ligação de esterificação e os fitoesteróis liberados serem então quantificados. A concentração de fitoesteróis totais foi de 1696,31 mg/kg e foram identificados campesterol, estigmasterol, ?-sitosterol e cicloartenol. A concentração de fitoesteróis livres foi de 1319,01 mg/kg. ?-sitosterol foi o composto majoritário, encontrado sob ambas as formas. Os fitoesteróis identificados nas sementes de baru possibilitam uma correlação com a atividade biológica verificada no seu uso popular.
