The objective of this study was to evaluate the physical, chemical and bioactive behavior of the tomatoes of the commercialized tomato at the Central of Supply of Goiás at different times of the year and stored for 15 days in ambient conditions and propose the construction of a model to estimate the content of lycopene from the coloring of the fruits. Seven monthly collections of tomatoes were carried out between February and August. The fruits were evaluated for color, firmness, fresh weight loss, titratable acidity, pH, soluble solids, lycopene, total extractable polyphenols, and antioxidant activity. The variation of brightness and firmness were inversely proportional to the storage time. The linear regression model generated from the correlation between the red color and the lycopene content can be used to estimate the lycopene value of the fruits. Future work may be carried out for developing non-destructive models of determination of lycopene for industrial tomato.
O tomate é a hortaliça mais produzida e consumida, tendo aceitabilidade tanto para o consumo in natura quanto para a industrialização. Apesar da ampla aceitação dos tomates, o consumidor apresenta como exigência para aquisição do fruto a qualidade, mensurada através de parâmetros como sólidos solúveis (SS) e acidez titulável (AT). Uma técnica de análise química, não destrutiva e não invasiva e de resposta rápida, é a de espectroscopia de absorção na região do infravermelho próximo que tem sido bastante utilizada em várias indústrias, desde agrícola a petroquímica. Considerando a produção em alta escala, a qualidade do tomate exigida pelos consumidores e por se tratar de uma técnica não destrutiva e não invasiva da espectroscopia no infravermelho próximo (Near Infrared Spectroscopy – NIR), faz-se necessário modelos testados em condições comerciais garantindo um modelo de infravermelho próximo para tomate facilitando a classificação. Realizou-se a validação de forma externa e prática dos modelos de infravermelho próximo para tomate in natura, comparando com os métodos destrutivos e conferindo a acurácia dos modelos na qualificação do fruto quanto aos teores de sólidos solúveis e acidez. O presente trabalho apresenta modelos do projeto executado de 2018 a 2019, construídos através dos aplicativos Model Builder e The Unscrambler e selecionados a partir de parâmetros como coeficiente de calibração, coeficiente da validação cruzada, erro médio do conjunto de calibração, e da validação cruzada e cálculo do desvio do resíduo de calibração. Os resultados foram obtidos através da previsão do modelo para os atributos sólidos solúveis (SS) e acidez titulável (AT), do tomate de mesa com maior variabilidade de produção. O modelo para SS apresenta potencialidade para uso comercial, seja na determinação de ponto de colheita, seja na quantificação de qualidade do vegetal. Já para AT, o NIR portátil não produziu um modelo aplicável pela limitação do comprimento de onda.
Este trabalho teve como objetivo estudar diferentes variedades de alface do tipo americana e seu potencial para a produção de produtos minimamente processados. O experimento foi conduzido na Horta do Setor de Horticultura, da Escola de Agronomia, na Universidade Federal de Goiás, em solo classificado como Latossolo. As variedades de alface analisadas foram: ‘Amélia’; ‘Lucy Brown’; ‘Laurel’; ‘5007’ e ‘5010’. As mudas foram avaliadas quanto à taxa de germinação, peso total, peso das folhas, peso da raiz, tamanho da maior raiz, altura e largura da folha maior, altura total da muda, quantidade de folhas. A colheita foi realizada 40 dias após o transplante, sendo coletadas 10 cabeças de alface de cada variedade e de cada bloco e levadas ao laboratório para avaliação. O delineamento experimental utilizado foi o de blocos casualizados, utilizando-se 4 blocos com todas as variedades (parcela), sendo cada parcela constituída por 140 plantas para cada variedade. As cabeças de alface colhidas foram avaliadas quanto ao peso total da planta, da raiz e da parte comercial, além da porcentagem do peso da parte comercial em relação ao peso total da planta. As alfaces de cada variedade que se apresentavam em condições comerciais foram colhidas, armazenadas em caixas plásticas e transportadas para uma empresa de processamento mínimo de alimentos. O delineamento experimental foi o inteiramente casualizado, utilizando-se 3 repetições para cada variedade. As avaliações dos teores de acidez titulável, sólidos solúveis e ácido ascórbico foram realizadas a cada dois dias, totalizando 6 dias de armazenamento. As variedades 5007 e 5010 são recomendadas para plantio e processamento mínimo, visto que apresentaram melhor desempenho quanto aos parâmetros avaliados.
The use of high productive-potential hybrids was one of the reasons for the increase in productivity in the agricultural segment of tomatoes for industrial processing. Thus, among the cultivars available on the market, in general, those that combine greater productivity with quality and that satisfy the needs of industries are chosen. In this context, the objective of this work was to evaluate the best time to implement near-infrared spectroscopy (NIRS) as an alternative method for identifying industrial tomato hybrids. Seeds from the hybrids: CRV8126, H9553, HMX4890, TPX28699 were used and 10 spectra were collected from a set of 20 seeds, from cotyledonary leaves of ten seedlings at 15 days after sowing (DAS) and from the true leaf of ten seedlings at 30 DAS. The results showed that the technique of spectroscopy in the near-infrared range, associated with multivariate analysis, allowed the discrimination of the studied hybrids. The phase in which the best results were obtained in the identification of each hybrid was in the seed, obtaining accuracy values above 90.00% and sensitivity of 100.00%, which proves the use of this instrumental technique on a portable scale for tomato hybrids with a high assertiveness rate.
