En divers points de l’Europe du Nord et de l’Est, des fermes-modèles se créent à l’aube du xix e siècle, avec l’objectif de favoriser le progrès agricole par l’exemple et l’émulation entre propriétaires. Y sont expérimentés les principes d’une agriculture raisonnée visant les profits les plus élevés à partir de nouveaux procédés de culture et d’élevage. Cet article examine la contribution des fermes-modèles à l’histoire de la gestion de l’entreprise agricole, sur la base de deux établissements avant-gardistes en France : Roville et Grand-Jouan, le premier étant dirigé par une grande figure de l’agronomie, Mathieu de Dombasle, et le second par un ancien élève de l’Institut de Roville, Jules Rieffel. Il met en lumière les pratiques managériales et comptables d’une administration « savante » des domaines agricoles, les schémas de pensée qui l’inspirent et la panoplie d’outils lui servant de boussole. De ces laboratoires de l’agriculture raisonnée émergent de nouvelles disciplines au travail et un esprit de quantification qui participent à la transformation des rapports entre la technique et la gestion, la rationalité des décisions du chef d’entreprise étant désormais considérée comme déterminante dans le succès de l’entreprise agricole.
Les discours agronomiques sur les engrais sont complexes : discours vantant les vertus des engrais chimiques et dénigrant les routines paysannes ou, au contraire, rejet de la chimie et promotion de la fumure organique ou, plus modérés, discours associant étroitement engrais chimiques et fumure d’origine organique. Les agronomes consacrent une très grande part de leurs écrits à cette question des engrais et traitent aussi bien des amendements et des engrais chimiques. Il s’agit alors, à travers trois exemples significatifs, de comprendre, à travers une analyse croisant l’histoire rurale, l’histoire des sciences et des techniques et l’histoire environnementale, comment les agronomes rationalisent les techniques de fertilisation des sols en s’adaptant à l’émergence de l’agrochimie au cours du xix e siècle. Le premier exemple choisi est celui de la production du salpêtre, analysée par Boussingault au début des années 1860. Le second concerne les eaux d’égout, issues des fosses de vidanges urbaines, utilisées comme engrais agricoles et étudiées par Dehérain. Enfin, le troisième est consacré, à partir des textes de Grandeau, à l’émergence des engrais chimiques et à celle de la lutte contre la fraude.

Si l'agro-chimie est triomphante dans la seconde moitié du XIX e siècle avec, par exemple, un Louis-Nicolas Grandeau (1834-1911), professeur de chimie appliquée à l'agriculture à la Faculté des sciences de Nancy et fondateur de la station agronomique de l'Est dans les années 1860-1880, au début du siècle, en revanche, certains agronomes, et parmi les plus renommés, sont très critiques au sujet de la chimie agricole. C'est le cas de Mathieu de Dombasle (1777-1843), chimiste de formation, initiateur de l'enseignement agricole et agronomique en France, qui publie, durant les années 1810-1830, des pages très sévères sur la chimie et son intérêt pour l'agriculture. Notre propos est consacré à l'étude de deux des écrits critiques de Mathieu de Dombasle sur la chimie qu'il a publié dans ses célèbres Annales Agricoles de Roville. Le premier texte porte sur les travaux du chimiste britannique Davy, le second est consacré aux travaux de chimie agricole de Sprengel.
