Objetivo: Determinar o índice glicêmico (IG) da polpa de açaí. Materiais e Métodos: Estudo experimental, realizado com 10 adultos saudáveis e eutróficos, de idade entre 20 e 50 anos, de ambos os sexos. Realizou-se dois testes de resposta glicêmica à polpa de açaí e um teste de resposta glicêmica à solução de glicose, em cada participante. Em cada dia de teste os participantes estavam em jejum, foi aferida a glicemia capilar e fornecido o alimento teste ou a solução de glicose. A glicemia capilar foi avaliada aos 30, 60, 90 e 120 minutos pós-prandial. O IG da polpa do açaí foi determinado pela razão entre a área abaixo da curva de resposta glicêmica da polpa do açaí e a área abaixo da curva de resposta glicêmica do alimento padrão (solução de glicose). O valor obtido foi multiplicado por 100 para expressar o IG em porcentagem. A área abaixo da curva de resposta glicêmica foi calculada pela regra trapezoidal. Foi calculada a média do IG de cada participante para determinar o IG da polpa do açaí. Resultados: A polpa de açaí pode ser classificada como um alimento de alto IG (86,07±11,83%) e carga glicêmica intermediária (16,34 g). Conclusão: A polpa de açaí é classificada como um alimento de alto IG e média CG. Sendo assim, a melhor opção de consumo deste alimento, pode ser no contexto de uma refeição, resultando em uma menor resposta glicêmica pós-prandial.
As Unidades de Alimentação e Nutrição (UAN) produzem um elevado índice de desperdício alimentar no decorrer da sua produção, sendo que parte destas perdas ocorre devido aos rejeitos deixados nos pratos dos comensais. O objetivo do presente estudo foi avaliar e comparar o valor de resto-ingesta per capita produzido em uma UAN, antes e durante uma campanha de conscientização contra o desperdício alimentar. Os dados foram coletados na refeição do almoço durante dois meses, entre meados de fevereiro até a metade do mês de abril de 2016, considerando dois períodos distintos: antes e durante a campanha. Os restos das bandejas dos clientes foram pesados desconsiderando as partes não comestíveis, como cascas de frutas e ossos. O valor de resto-ingesta per capita foi calculado mediante o peso do resto total dividido pelo número de clientes que frequentaram o refeitório, em cada dia de estudo. Para a análise dos dados utilizou-se o software SPSS versão 13.0, sendo o nível de significância máximo assumido de 5% (p≤0,05). O valor de resto-ingesta antes e durante a campanha apresentou-se significativamente acima dos padrões determinados como aceitáveis pela UAN, com valores de 25,37±4,67 g e 24,91±6,68 g (p<0,025), respectivamente, sendo que a realização da campanha não apresentou resultados estatisticamente significativos (p=0,077) para promover a diminuição do desperdício.
