A competência dos trabalhadores que realizam a colheita manual do tomate está intrinsecamente relacionada à cooperação e aos conhecimentos adquiridos na prática. O objetivo desse artigo é analisar a contribuição dos saberes tácitos dos colhedores de tomate na elaboração de estratégias de escolha dos frutos a serem colhidos. Baseado nos pressupostos da Ergonomia da Atividade foi conduzido um estudo de caso em três propriedades agrícolas no interior do estado de São Paulo, Brasil, utilizando como ferramentas as observações livres, entrevistas com roteiro semiestruturado e análise dos discursos dos trabalhadores da colheita manual do tomate. Os resultados mostram que os trabalhadores constroem um mapa mental como uma referência do que é um fruto adequado para ser colhido, formado a partir de diversas informações multissensoriais. O trabalhador classifica e selecione tacitamente o fruto de acordo com a qualidade prescrita em protocolos, mesmo sem terem recebido um treinamento formal. Portanto, embora tido como um trabalho braçal, esse estudo mostra a complexidade dos saberes mobilizados na colheita e a importância de se entender esse processo para a compreensão do trabalho real.
