SUMMARY A 97% esterified pectin was saponified to about the same degree of esterification of 50% by HCI, NaOH, and orange pectin esterase, respectively. The three partially saponified pectins were fractionated by chromatography on diethylaminoethylcellulose columns. The pectins saponified by HC1 and NaOH were largely homogeneous, but the pectin saponified by enzyme could be separated into large fractions of very different degrees of esterification. Orange pectin esterase seems to de-esterify adjacent COOCH, groups of a macromolecule by a single-chain mechanism.
scite is a Brooklyn-based organization that helps researchers better discover and understand research articles through Smart Citations–citations that display the context of the citation and describe whether the article provides supporting or contrasting evidence. scite is used by students and researchers from around the world and is funded in part by the National Science Foundation and the National Institute on Drug Abuse of the National Institutes of Health.
