-The objective of this study was to evaluate the correlation between the ability to walk (gait score), incidence of femoral degeneration, tibial dyschondroplasia, valgus and varus deformity and leg symmetry of broiler chickens. Male chickens of the Cobb strain from a commercial poultry farm were utilized in this experiment. Fifty 35 and 42-day-old birds were evaluated according to the gait score and valgus or varus incidence. To assess the bilateral symmetry and the lesion score for femoral degeneration and tibial dyschondroplasia, broilers were weighed and euthanized for the removal of the femur and tibia of both legs. The lesion scores for femoral degeneration and tibial dyschondroplasia, varus or valgus deformity, bone symmetry and gait scores of the chickens were then correlated. It was found that weight, age and the incidence of femoral degeneration and tibial dyschondroplasia are not always correlated with the gait score and that only valgus deformity is more correlated.

A total of 1080 male chicks were distributed according to a completely randomized experimental design, with six treatments with six replicates of 30 birds each. The following treatments were evaluated: basal diet (control), basal diet supplemented with an antimicrobial, basal diet supplemented with a probiotic, basal diet supplemented with a prebiotic, basal diet with a symbiotic, and basal diet supplemented with organic acids. Weight gain, feed intake, feed conversion ratio and livability were recorded when broiler chickens were 10, 21, 35, and 42 days old. On day 42, 72 birds were individually weighed and sacrificed. In order to evaluate the morphometrics of the different intestinal wall layers, segments of the small intestine and the cecum were collected from two birds per replicate, and intestinal integrity (SEM) was evaluated in the same segments of two birds per treatment. During the starter period (1-21 days old), birds fed the alternative additives presented similar weight gain as those fed the antimicrobial product, but were not different from control birds. Feed conversion ratio of birds fed alternative additives was better than that of the control birds from one to 10 days of age, but not during the remaining rearing period, and was similar to the birds receiving the antimicrobial. The morphometric parameters of the different intestinal wall layers was not influenced by the treatments. During the total rearing period, the evaluated alternative additives did not improve intestinal integrity or broiler performance.

A study was conducted to investigate the effects of organic acids (OA) and competitive exclusion product (CE) on growth performance, intestinal morphology, and concentration of volatile fatty acids in the cecal content. The experiment lasted for 10 wk. Four hundred twenty 1-d-old female commercial cross turkey poults (British United Turkeys, BUT Big 9) were distributed into 4 treatments with 5 replicates/pen of 21 birds each. The birds were fed a basal diet without growth promoter (control), diet with lincomycin (44 mg/kg), diet with organic acids (2 g/kg), and diet with product of CE (10(9) cfu/kg). Dietary levels of other nutrients, housing, and general management practices were similar for all treatments. On the first week (d 0-7), the BW and BW gain of the birds that fed diets with OA were lower than in the control group. In the fattening phase (d 28-70), the feed intake of the OA-treated group was lower than compared with the control. The birds that received diet with OA and CE product presented higher concentrations of propionic acid, at 14 d, and butyric acid in cecal content at 28, 56, and 70 d, compared with the control. Dietary inclusion of additives had no significant effects on intestinal villus height, crypt depth, and villus:crypt ratio. Organic acids had negative effects either on early gain or feed intake throughout the study. Because the test was conducted under controlled experimental conditions, the additives that showed results similar to those found by using antibiotics should be studied further in commercial farms to obtain results that can be incorporated into practice.

The present study aimed to assess the influence of adding straw bales, step platforms, and laser projectors as environmental enrichment resources on the behaviour and welfare indicators of broiler chickens (Gallus gallus domesticus). A sample of 4,000 day-old male Cobb® 500 birds was used. The experimental treatments consisted of No Environmental Enrichment (NEE)—similar to a conventional environment; and Environmental Enrichment (EE)—environment enriched with straw bales, step platforms, and laser projectors, with four replicates per treatment of 500 animals. Behavioural characteristics (ethological observation through cameras, grab test, and modified touch test) and animal welfare indicators (pododermatitis and dorsal cranial myopathy) were assessed. The birds submitted to the EE treatment exhibited greater exploratory activity and expression of behaviours associated with comfort and welfare, whereas those in the NEE group were less active. Locomotion and play fighting behaviour decreased and behaviours associated with comfort increased as age advanced. The frequencies of interaction with laser spots and birds lying around straw bales were the highest in the 1st week (P<0.01). The behaviours of pecking at straw bales (P<0.0004), using the step platforms (P = 0.0001) and being on top of straw bales (P<0.0002) gradually increased. The chickens accessed the feeding troughs the most in the period of 0800 hours (P<0.0001) and expressed the highest frequencies of behaviours associated with comfort in the 1400 hours and 1700 hours periods. The birds in the EE group were calmer in face of human presence and touch and scored higher in animal welfare indicators. Adding straw bales, step platforms, and laser projectors increased locomotion, reduced expression of fear, and improved animal welfare indicators of broiler chickens.

The protection level against Salmonella Enteritidis was evaluated in chickens after in ovo treatment with different species of Lactobacillus spp. inoculated into the air cell or by immersion in broth culture. Two hundred forty embryonated eggs were distributed into 8 groups, corresponding to treatments with Lactobacillus acidophilus, Lactobacillus fermentum, Lactobacillus salivarius, and control. On d 18 of incubation, 4 groups were inoculated with 0.1 mL of inoculum in the air cell and 4 groups were immersed for 3 min in culture of each treatment. Two days after hatching, 0.5 mL of Salmonella Enteritidis culture was inoculated by the intraesophageal route. On d 5 of life, the chicks were euthanized and the ceca were processed to obtain Salmonella Enteritidis counts. There was no decrease in Salmonella Enteritidis colonization of chick ceca, regardless of treatment or route of administration. Lactobacillus spp. samples used in the treatment showed no probiotic potential in chicks when inoculated in ovo, in relation to Salmonella Enteritidis inhibition in poultry ceca.

Aim: To evaluate the use of organic acids (OAs) and competitive exclusion (CE) product administered continuously in the feed and transiently in drinking water on the control of Salmonella enterica subspecie enterica serotype Enteritidis (SE) prior to slaughter. Methods and Results: The influence of treatments were evaluated on pH, population of the lactic acid bacteria (LAB) and bacteria of the family Enterobacteriaceae, concentration of volatile fatty acids and SE colonization in the crop and caecum. The birds were challenged with SE 24 h before being slaughtered, and then, the caeca and crop were removed and subjected to SE counts. Continuous administration of OAs reduced the population of bacteria from the Enterobacteriaceae family in both crop and caecum, positively influenced the butyric acid concentration and reduced SE colonization in the caecum. The diet supplemented with CE product positively influenced the quantity of LAB in the crop and caecum, elevated the butyric acid concentration and reduced both Enterobacteriaceae quantity and SE colonization in the caecum. There was no effect from administering the treatments via drinking water on the variables measured. Conclusions: Continuous supplementation in feed with OAs and CE product reduced SE colonization of the caeca. Significance and Impact of the Study: Supplementation of OAs and CE product in diet to turkeys can reduce the SE load, potentially leading to a lower contamination risk of meat during slaughter.

Production of fumonisins B1 (FB1) and B2 (FB2) by two Brasilian strains (LAMIC 2999/96 and 113F) and one American strain (NRRL 13616) of Fusarium moniliforme were evaluated in laboratory cultures subjected to different temperatures (20, 25, and 30ºC), and moisture contents (25, 34, and 42%) on corn substrate. The cultures were grown during 10, 20, 30, 45, and 60 days, totalizing 135 treatments with two repetitions for each one. The fumonisins were extracted with acetonitrile/water. The clean-up with end-capped C18 silica (C18ec) cartridges and fumonisin derivatization with o-phtaldialdeyde were carried out through an automated sample processor system (ASPEC), followed by quantification of the toxins through HPLC. Fumonisin production varied widely, reaching average yields from 0.25 to 5515.45 µg/g of FB1 and from 0.15 to 3032.10 µg/g of FB2. In the present work, the factors strain, temperature, moisture and days of fungal culture were evaluated, and all of them had a bearing on the amounts of fumonisins produced. The highest FB1 average yields were obtained by the strain 113F, under the following conditions: 34% moisture content, 60 culture days, and temperature of 25ºC. The highest FB2 average yield was obtained by the same strain with cultures over 45 days, 42% moisture content, at the temperature of 25ºC. Via regression analysis, the ideal temperature for fumonisins production was, calculated as 24.5 and 24.3ºC (± 2ºC) for FB1 and FB2, respectively.
