Sterinzusa,mxnensemg und Steringehalt in 41 verschiedenen pflanzlichen und tierischen Fetten b n E p i e d e H o m b e r g undBirgitta B i e l e f e l d * Die Sterinzusammensetzung und der Steringehalt wurden in 41 verschiedenen pflanzlichen und tierischen Fetten untersucht. Kapillarsaulen ergaben erheblich bessere Trennungen als gepackte Saulen, wodurch besonders die Minorkomponenten besser erfaDt werden konnten. Die Steringehaltsbestimmung wurde gaschromatographisch mit Betulin als innerem Standard durchgefiihrt. Parallelversuche mit der enzymatischen Methode zeigten, d d diese bei Fetten mit einem hohen A 7-Steringehalt zu niedrige Werte liefert.
Eine Methode zur Trennung und quantitativen Bestimmung von freien Sterinen, Sterinestern, freien und acylierten Steringlucosiden in Fetten wurde entwickelt und auf die Untersuchung von rohen und raffinierten Palmölen angewandt. Bei der Raffination erfolgen charakteristische Veränderungen in Gehalt und Zusammensetzung aller 4 Sterinfraktionen. Einige Proben zeigten bei bestimmten Raffinationsschritten einen deutlichen Anstieg des Cholesteringehalts. Da keine der 4 untersuchten Sterinfraktionen im Rohöl einen so hohen Cholesteringehalt besitzt, muß auf das Vorhandensein von Sterinen in gebundener Form geschlossen werden, die bei der Raffination freigesetzt und erst dann mit den herkömmlichen Untersuchungsmethoden erfaßt werden können.
Sterine sind Bestandteile aller pflanzlichen und tierischen Fette. Die Zusammensetzung der Sterinfraktion ist vielfach so charakteristisch. daU sich dadurch Fette identifizieren und Vermischungen und Verfalschungen nachweisen lassen. Die Sterinanalyse erlangte besondere Bedeutung zur Untersuchung der Reinheit von Butterfett und Olivenol, aber auch fiir andere, besonders teure Speisefette ist sie ein wertvolles Hilfsmittel zur Kontrolle von Identitat und Reinheit.

4‐Methylsterine und Triterpene sind Begleitstoffe der Sterine im Unverseifbaren mit zum Teil sehr ähnlichen chromatographischen Eigenschaften. In 12 verschiedenen Pflanzenfetten wurden jeweils Gehalt und Zusammensetzung der Hauptbestandteile dieser drei Substanzgruppen untersucht und ihr Einfluß auf die Sterinanalyse festgestellt. Bei den meisten Fetten ist eine dünnschichtchromatographische Abtrennung der 4‐Methylsterine und Triterpene von den Sterinen notwendig, um gaschromatographisch sowohl den Steringehalt als auch die Sterinzusammensetzung einwandfrei bestimmen zu können.
