RESUMOA produção mundial de pescado oriundo da aquicultura já contribui com aproximadamente 50% do pescado utilizado na alimentação humana. Dentre as espécies produzidas em água doce destacam-se as tilápias, rãs e camarões. Essas espécies apresentam alto valor nutricional e podem ser produzidas em diversas regiões do Brasil. O estado do Rio de Janeiro apresenta condições climáticas adequadas para a criação dessas espécies. Dentre os sistemas de produção utilizados destacam-se a recirculação de água, sistema esse denominado fechado e intensivo; os tanques-rede que são abertos e intensivos; os viveiros que podem ser extensivos e semi-intensivos. A produção de organismos aquáticos, em cativeiro, para alimentação humana irá suprir uma demanda evidenciada nos últimos anos, quando a produção oriunda da captura está em pleno declínio. O pescado é um alimento de alto valor biológico e se apresenta como alternativa de alimentação saudável e a sua produção em pequena e média escala é uma alternativa de renda, para os produtores em diversas regiões do Brasil.Palavras-chaves: Aquicultura de água doce. Rã-touro. Tilápia. Camarão da Malásia. ABSTRACTThe World aquaculture fish production already accounts for approximately 50% of the fish used for human consumption. Among the species produced in freshwater are tilapia, frogs and shrimps. These species present high nutritional value and can be produced in several regions of Brazil. The state of Rio de Janeiro presents adequate climatic conditions for the creation of these species. Among the production systems used are water recirculation, a system called closed and intensive; the net tanks that are open and intensive; the ponds that can be extensive and semi-intensive. The production of aquatic organisms in captivity for human consumption will meet a demand evidenced in recent years, when production from the capture is in full decline. Fish is a food of high biological value and presents itself as a healthy food alternative and its small and medium scale production is an income alternative for producers in several regions of Brazil.
