Objetivou-se caracterizar e comparar polpas de açaí-roxo (grosso-AGR, médio-AMR, fino-AFR) e açaí-branco (grosso-AGB) quanto sua composição centesimal, perfil de compostos fenólicos (CF) e perfil de ácidos graxos (AG), podendo assim avaliar a contribuição de AG essenciais, presente nestas polpas, para alcance da ingestão diária aceitável. A composição centesimal das amostras foi determinada por métodos convencionais e o perfil de CF por espectrometria de massas. Já os AG foi por cromatografia gasosa. Quanto à composição, os teores de umidade variaram de 82,74-92,00 g/100g. Já os teores de cinzas todas as amostras diferiram, variando de 0,42-0,94 g/100g. Em relação aos lipídios, a amostra AGR (10,67 g/100g) apresentou maior teor e a AFR (2,94 g/100g), menor teor. Os teores de proteína e carboidratos variaram, respectivamente, entre 1,21-1,62 g/100g e 2,88-5,24 g/100g. Quanto ao perfil de CF foram identificados 21 compostos sedo 11 no modo negativo e 10 no modo positivo, entre esses destacam-se o ácido caftárico e o crosseriol, presente em todas as amostras. Já em relação ao perfil de AG, houve predominância de insaturados, especialmente de monoinsaturados como oléico (56,80-59,50%). Quanto à contribuição dos AG poli-insaturados no alcance das recomendações de AG essenciais, destaca-se novamente a amostra AGR, com contribuições de pelo menos 17,71% para o AG linoléico e de 12,06% para AG alfa-linolênico, respectivamente, por porções habituais de consumo.
Mineral content, total phenolic compounds (TPC), and antioxidant capacity were determined in three samples of purple-ac ¸aı ´(coarse-PAC, medium-PAM, and fine-PAF), and one of white-ac ¸aı ´(coarse-WAC) and their respective bioaccessible fractions. TPC content differed in all samples, with PAC (583.79 mgAGE/100 g) having the highest content; however, PAM showed higher bioaccessibility (32.27%). PAC presented higher antioxidant capacity in the FRAP tests (74.34 lM FeSO 4 /g) and ABTS (55.05 lM Trolox/g). However, no differences were found in DPPH between PAC (1986.66 EC50) and PAM (2408.88 EC50) samples. Antioxidant capacity was decreased in all samples after digestion. Potassium was in the highest proportion (7121.90 mg/100 g-PAC), followed by Ca (349.92 mg/100 g-PAM), and Mg (169.41 mg/100 g-PAM), in all the samples. However, Ca presented the highest bioaccessible fraction, followed by Mg and Mn, with the highest percentages observed in WAC samples (90.30, 74.30, and 64.52%, respectively).
Exercise-induced muscular overload can trigger delayed onset muscle soreness (DOMS). DOMS is related to the indiscriminate use of analgesics and nonsteroidal anti-inflammatory drugs without proper guidance, decreased physical exercise adherence and degenerating sports performance, increased risk of injury, and reduced muscle strength and function. Dietary anthocyanins have been extensively studied as potential natural treatments for DOMS, but the indication, dosage, and form of use remain highly variable. Therefore, this review aims to synergize and present evidence relating to the effect of anthocyanins on DOMS in clinical studies. Notably, the results of anthocyanin supplementation for DOMS were found to be inconclusive. The use of protocols with lower anthocyanin doses yielded better results than those with high-dose supplements, suggesting that anthocyanin-rich foods are more accessible as therapeutic tools, leading to the conclusion that these foods could be used to prevent and treat DOMS. However, consumption protocols for this purpose are not yet well established, and the answer is dependent on the methodological quality of future studies.
A fenilcetonúria é uma doença autossômica recessiva. É causada por um erro inato que ocorre em indivíduos onde há uma alteração no gene 12q22-q24.2 do cromossomo PAH, que codifica a fenilalanina hidroxilase. Também conhecida como PKU, a patologia consiste na ausência dessa enzima ou na falta de sua plena funcionalidade, que pode ser detectada nos primeiros dias de vida. O tratamento da PKU é essencialmente dietético e deve ser iniciado assim que for diagnosticado. A restrição alimentar de indivíduos fenilcetonúricos é extensa, baseada em uma dieta limitada que oferece baixo teor ou isento de fenilalanina. A diminuição dos níveis de fenilalanina no sangue visa proteger o paciente de danos neurológicos causados por níveis elevados desse aminoácido. Comumente, as dietas são baseadas em frutas e vegetais com baixos níveis de Phe acompanhados de fórmulas alimentares para atingir a ingestão proteica necessária. Com base em estudos científicos, há evidências de que a dieta restritiva, à qual esses pacientes têm sido submetidos, resulta na diminuição da capacidade antioxidante do organismo e, consequentemente, contribui para o aumento do estresse oxidativo causado pela presença de espécies reativas de oxigênio. Assim, o objetivo do presente estudo foi realizar uma revisão integrativa baseada em estudos científicos sobre a correlação entre estresse oxidativo em pacientes fenilcetonúricos e patologia. A análise dos estudos selecionados mostrou forte correlação entre estresse oxidativo e distúrbios neurológicos em indivíduos diagnosticados com PKU, sendo mais comum em pacientes com diagnóstico tardio, mostrando que a dieta restritiva é um fator essencial na proteção dos pacientes.
