Shea nuts (Vitellaria paradoxa) were cracked and sorted. Fluted pumpkin seeds (Telfairia occidentalis Hook) were dehulled and washed. The Shea kernel and Telfairia cotyledons were oven dried (60°C, 24h) separately in a hot air oven, milled into flour and oil extracted. Crude palm oil extracted from the palm fruit was used as control. The oil samples were analyzed for chemical composition, physical properties, and fatty acid profile. Shea nut oil (Shea butter) gave 58.00% ether extract, 0.88% free fatty acids, 1.7mgKOH/g acid value, 1.03mEqO 2 /kg peroxide value, 70.00g/100g iodine value, 227.94mgKOH/g saponification value, 0.95% Unsaponifiable matter, and 226.17mgKOH/g ester value. Fluted pumpkin seed oil gave 52.60% ether extract, 0.71% free fatty acids, 1.41mgKOH/g acid value, 1.17mEqO 2 /kg peroxide value, 119.67g/100g iodine value, 179.04mgKOH/g saponification value, 0.57% Unsaponifiable matter, and 177.63mgKOH/g ester value. The iodine value of Shea butter and Telfairia seed oil were significantly (p<0.05) higher than that of the control which gave 57.33g/100g iodine value. Shea butter also gave 1.461 refractive index, 0.927g/ml density, 36.57°C slip melting point, 211.00°C smoke point, 83.92cSt kinematic viscosity, and 4red and 20yellow lovibond colour. Fluted pumpkin seed oil gave 1.463 refractive index, 0.903g/ml density, 18.60°C slip melting point, 244.50°C smoke point, 34.98cSt kinematic viscosity, and 5red and 20yellow lovibond colour. Shea butter gave 50.6% total saturated fatty acids, and 49.1% total unsaturated fatty acids, with stearic (45.8%) and oleic (42.5%) as the predominant saturated, and unsaturated fatty acids respectively. Fluted pumpkin seed oil gave 18.4% total saturated fatty acids, and 80.2% total unsaturated fatty acids, with palmitic (17.5%) and linoleic (62.4%) as the predominant saturated, and unsaturated fatty acids respectively. Shea butter, with a melting point of 36.57°C will provide a good solid base for bakery fat production, while Telfairia seed oil with iodine value of 119.33(g/100g) will provide healthy fatty acids and the needed plasticity. A blend of Shea butter and fluted pumpkin seed oil in bakery fat production has potential to improve the nutritional and functional properties of the end products.

The effect of varieties, local (Abakalike) and foreign (Mama Gold) and two processing methods, semi-dry and wet grinding methods on the characteristics of rice flour were investigated. Functional and chemical properties of the rice flour were analyzed using standard methods. The functional parameters analyzed were dispersibility, relative bulk density, swelling power and water absorption capacity while chemical parameter were moisture content, protein, ash, sugar, starch, amylase and amylopectin. The parameters were influenced by variety and processing methods. Highest dispersibility, relative bulk density and swelling power values were associated with sample A which is the foreign variety, while solubility and water absorption capacity were associated with sample B, which is the local variety, all processed by the semi-dry grinding method. The semi-dry ground rice flour produced highest protein and ash as seen in sample B, while wet milled rice flour were associated with highest moisture and starch contents. The flour produced from the local rice (Abakalike) had highest protein, ash sugar and amylose over the foreign variety with all the parameters showing significant differences.

A study of the Physico-chemical and functional properties of pumpkin / wheat flour blends and sensory attributes of cakes made from the flour blends where evaluated in the food science laboratory of Rivers State University. The physico-chemical analysis were carried out using standard AOAC methods with 100% wheat flour serving as control. Result of chemical analysis of wheat/pumpkin composite flour blends ranged from 6 .51 – 11.78%, 0.58 – 6.74%, 5.81 – 11.97%, 0.90 – 1.56%, 0.51 – 6.93% and 72.22 – 73.68% for moisture, ash, protein, fat, crude fiber and carbohydrate, respectively.  There was a decrease in moisture, fat, protein and carbohydrate and an increase in ash, and crude fiber as the level of pumpkin flour substitution increased.  Starch, amylose and amylopectin ranged from 37.68 – 83.82%, 8.76 – 24.64 % and 28.92 – 59.18%, respectively. The lowest starch (37.68%) content was recorded in pumpkin flour made entirely of pumpkin. Depending on the mixing ratios between flour and pumpkin flour, a wide range of functional properties were recorded, including 1.04 – 5.30 ml/g water absorption capacity, 0.58 – 0.61 g/ml bulk density, 8.50 – 16.50% least gelation concentration, 1.07 – 54.26% foaming capacity, 0.00 – 27.84% foaming stability, 53.71 – 93.33% swelling capacity, 45.46 – 48.49% emulsion capacity and 35.50 – 56.02% emulsion stability. Sensory evaluation of the cakes showed no significant difference (p>0.05) in general acceptability between the control and up to 70% substitution with pumpkin flour. The scores ranged from 2.61 – 8.22, 4.13 – 7.13, 5.04 – 7.70, 3.87 – 7.70 and 2.74 – 7.83 for taste, appearance, colour, mouthfeel and general acceptability respectively.  Incorporation of pumpkin flour to wheat flour increased the ash and crude fiber content of the composite flour.

The objective of this work was to evaluate the effect of chemical interesterification, as a modification process on the physicochemical properties and fatty acid profile of bakery shortening produced from a blend of Shea stearin and fluted pumpkin seed oil. The Shea nut oil was fractionated, and the solid stearin fraction blended with fluted pumpkin seed oil in the following ratios: 30:70, 40:60, 50:50,and 60:40 (Shea stearin: fluted pump seed oil), The blends were stabilized with recommended additives such as; distilled monoglyceride (E471) and preservatives such as; citric acid (E330), BHT (E321), homogenized by continuous stirring and crystalized by cooling at 17°C, then tempered at 23-25°C for 48h, to attain a stable polymorphic form, used as non-interesterified blends (NIEBs). Another set of 30:70; 40:60; 50:50; and 60:40 (Shea stearin: fluted pumpkin seed oil), were chemically interesterified with sodium methoxide (CH 3 ONa) as catalyst, crystalized, stabilized, and used as chemically interesterified blends (CIEBs).The chemical properties, physical characteristics (including solid fat content), and the fatty acid profile of all the chemically interesterified (CIEB) and the non-interesterified (NIEB) samples were determined. There was no significant (p>0.05) change in the peroxide value, iodine value, and the refractive index of NIEBs and there corresponding CIEBs. The acid value, free fatty acids, slip melting point, density, and solid fat content were significantly (p<0.05) reduced after interesterification. Interesterification caused rearrangement of triacylglycerol species, resulting in increased unsaturated fraction and reduction in the saturated fraction. Interesterification gave fats with wide plastic range suitable for bakery fats, icing-shortening, filler fats, and allpurpose shortenings.

The microbiological quality, heavy metal and Polycyclic Aromatic Hydrocarbons (PAH) of roasted plantain sold in selected locations in Port Harcourt metropolis were investigated. Roasted plantain samples were purchased from seven different locations in Port Harcourt metropolis namely; Rivers State University (RSU) campus, University of Port Harcourt (Uniport) Choba, Waterline Junction, Rumukoro Junction, Elekahia Station and Borokiri Station. Samples were analyzed for microbiological, heavy metal, and Polycyclic Aromatic Hydrocarbons (PAH) quality and laboratory roasted plantain used as control. Total Aerobic Count (TAC), Total Staphylococcal Count (TSC), Total Coliform Count (TCC), Total Escherichia Coli (TEC) and total mold count of samples were assessed by inoculating into different selective media such as Eosin Methylene Blue (EMB), MacConkey Agar (MCA), Mannitol Salt Agar (MSA), Nutrient Agar (NA)and Potato Dextrose Agar (PDA) respectively and incubated at the desired temperature. Staphylococcus aureus, E. coli, Asperillis sp. and Penicillium sp. were identified from the samples (Bole). TAC in roasted plantain samples ranged from 5.2 × 10 6 to 1.3 × 10 7 CFU/g, TSC ranged from 4.0 × 10 5 to 5.0 × 10 6 CFU/g, TCC ranged from 2.0 × 10 5 to 4.1 × 10 6 CFU/g, TEC ranged from 9.0 × 10 5 to 1.7 × 10 6 CFU/g and Total mould count ranged from 2.0 × 10 5 to 1.5 × 10 6 CFU/g. Result showed that street vended roasted plantain (Bole) sold along roadsides were not safe for human consumption, when compared with the set standards by International Commission on Microbiological Specification for Food (ICMSF, 1996) and therefore the need for improved sanitary practices. The result of heavy metals were less than <0.001 (mg/kg) in all the samples examined. Polycyclic Aromatic Hydrocarbons (PAH) (mg/kg) ranged from 0.003 to 0.015 kg/mg with sample from Rumuokoro Junction as the lowest and sample from Waterline Junction as the highest which were below the recommended limit of 5.0kg/mg. The study recommended the need for improvement and sustainability of food safety practices of food vendors for improved health of consumers.
