ResumoEste trabalho teve como objetivo avaliar o aproveitamento da farinha de banana verde (FBV) (Musa (grupo AAA) 'Cavendish anã') na produção de biscoitos tipo cookies. Foram produzidos biscoitos com substituição parcial da farinha de trigo por FBV na proporção de 10, 20 e 30%, e biscoitos Padrão sem FBV. Os biscoitos foram avaliados quanto à composição química, características físicas (diâmetro, espessura e peso) e grau de aceitação. O teste de aceitação dos biscoitos indicou não haver diferença significativa entre as diferentes formulações e o padrão, com exceção para o biscoito tipo III que apresentou menor aceitação (p < 0,05) entre as crianças. A composição química dos biscoitos não diferiu significativamente em relação ao teor de umidade e lipídios totais. As maiores diferenças foram verificadas entre os teores de amido, açúcares redutores totais e sais minerais. As maiores diferenças entre as características físicas dos biscoitos foram verificadas no diâmetro pós-cocção, indicando que a FBV alterou as propriedades tecnológicas da farinha de trigo. Assim, por elevar o valor nutricional do produto sem alterar significativamente suas propriedades físicas e características sensoriais, a utilização da farinha de banana verde como substituto parcial da farinha de trigo é viável e pode ser recomendada no preparo de alimentos alternativos enriquecidos em relação aos alimentos tradicionais. AbstractThe objective of this work was to evaluate the use of unripe banana meal (UBM) (Musa (AAA group) 'Dwarf Cavendish') in the production of cookies. Cookies were produced substituting 10, 20 and 30% of the wheat flour for UBM, as well as standard cookies without UBM. The chemical compositions, physical features (weight, diameter and thickness) and sensorial characteristics of the cookies were evaluated. A cookie acceptance trial was conducted, which revealed no significant difference between the formulations containing UBM and the standard, except for the type III cookie, which was less well accepted (p < 0.05) by children. The chemical composition of the cookies did not differ significantly from the standpoint of moisture and total lipids. The most important differences were found in the starch, total reducing sugars and mineral salts content. The main differences in the cookies' physical characteristics were their diameters after baking, indicating that UBM altered the properties of the wheat flour. Therefore, in view of the high nutritional value of the cookies containing banana meal, with no significant alteration of their physical and sensorial characteristics, the use of this meal as a partial substitute of wheat flour is viable and can be recommended in the preparation of alternative nutritionally enriched foods. The present study aimed to review the literature on the prevalence of metabolic syndrome and its components in adolescents (10-19 years old). Essa sín-drome foi identificada pela primeira vez em 1922 e tem sido descrita por diferentes terminologias como quarteto mortal, síndrome X, síndrome plurimetabólica e síndrome de resistência à insulina 2 .A ocorrência da síndrome metabólica em crianças e adolescentes está associada a risco aumentado de doenças cardiovasculares, problemas psicossociais, metabolismo anormal de glicose, distúrbios hepáticos e gastrintestinais, apnéia do sono, complicações ortopédicas 3 e distúrbios no desenvolvimento motor 4 . Além disso, a síndrome metabólica adquirida na juventude, assim como seus riscos à saúde, tende a persistir na idade adulta 3 .Os critérios diagnósticos da síndrome metabólica mais utilizados são os da Organização Mundial da Saúde (OMS) 5 e os do National Cholesterol Education Program's Adult Treatment Panel III (NCEP-ATP III) 6 , e algumas diferenças entre eles são observadas. A docência universitária é, por si só, muito estressante, e sua associação com fatores de risco pode levar a impactos negativos sobre a qualidade de vida. Tendo em vista esse quadro, esta pesquisa objetivou analisar a percepção de qualidade de vida e saúde e fatores de risco de professores de uma IES pública do Sul do Brasil. Participaram 293 professores da graduação e/ou pós-graduação. Os dados foram analisados com o pacote estatístico SPSS 13.0. Para comparação de diferenças entre os grupos foram utilizados os recursos da estatística não paramétrica (p<0,05). A maioria dos professores demonstrou percepção positiva sobre sua qualidade de vida (84,3%) e saúde (76,0%). A investigação dos fatores de risco apontou ocorrências de 67,2% para consumo excessivo de álcool, de 56,7% de indivíduos sedentários, de 37,6% de indivíduos com excesso de peso e 9,2% de fumantes. Embora haja uma boa percepção de saúde e qualidade de vida entre os docentes, os fatores de risco para a saúde apresentaram elevada incidência no grupo avaliado. Palavras-chave: Qualidade de vida. Background:The incidence of obesity in children is increasing worldwide, primarily in urbanized, high-income countries, and hypertension development is a detrimental effect of this phenomenon.Objective:In this cross-sectional study, we evaluated the prevalence of excess weight and its association with high blood pressure (BP) in schoolchildren.Methods:Here 4,609 male and female children, aged 6 to 11 years, from 24 public and private schools in Maringa, Brazil, were evaluated. Nutritional status was assessed by body mass index (BMI) according to cutoff points adjusted for sex and age. Blood pressure (BP) levels above 90th percentile for gender, age and height percentile were considered elevated.Results:The prevalence of excess weight among the schoolchildren was 24.5%; 16.9% were overweight, and 7.6% were obese. Sex and socioeconomic characteristics were not associated with elevated BP. In all age groups, systolic and diastolic BP correlated with BMI and waist and hip measurements, but not with waist-hip ratio. The prevalence of elevated BP was 11.2% in eutrophic children, 20.6% in overweight children [odds ratio (OR), 1.99; 95% confidence interval (CI), 1.61-2.45], and 39.7% in obese children (OR, 5.4; 95% CI, 4.23-6.89).Conclusion:Obese and overweight children had a higher prevalence of elevated BP than normal-weight children. Our data confirm that the growing worldwide epidemic of excess weight and elevated BP in schoolchildren may also be ongoing in Brazil.
A high prevalence of overweight and obesity was found in this study, indicating that children of both genders are affected regardless of their economical status and age.
