The influence of the concentration, viscosity, electrical conductivity and Bloom index of gelatin solutions on the electrospinning process and the fibrous membrane formed was evaluated. Electrospun membranes were produced at different concentrations for three Bloom values (90, 250 and 280); the solutions were evaluated in terms of viscosity and electrical conductivity and the fibrous membranes by SEM and tensile tests. Results indicate that the electrospinning was most successful when the solution viscosity was within the range of 300 to 700 mPa•s, regardless of the type of gelatin used in the investigated conditions. The average fiber diameter increased with the increased solution viscosity and the relationship between them was well described by a linear equation. With regard to the mechanical properties, GeB250 and GeB280 fibrous membranes showed elongation, on average, at least ten times higher than that of GeB90 membranes.
In this research, cellulose nanocrystals (CNs) were extracted from corn cobs by 2,2,6,6,-tetramethylpiperidine-1-oxyl radical-mediated oxidation combined with ultrasonic treatment for the first time. These CNs were then used as a mechanical reinforcement agent and barrier in chitosan-based bionanocomposite films. Birefringence analyses under crossed polarizers indicated the presence of isolated nanocrystals in suspension, which was later confirmed by TEM analysis. The crystallinity index obtained from X-ray diffraction was 92.4%. The incorporation of these nanoparticles into a filmogenic matrix of chitosan made it possible to obtain bionanocomposite films with improved properties. The water-vapor permeability was reduced by 70%, whereas the tensile strength and Young's modulus increased by up to 136 and 224% respectively. The developed films were applied as interleaving of sliced cheese, and the efficiency was assessed by investigation of adhesion between the surfaces and by comparing its properties with two commercial interleaving products (polyethylene (PE), and Greasepel paper (GP)). Concluding, the developed films showed a substantial potential to be exploited as an interleaving film, owing to its excellent mechanical properties, permeability, hydrophobicity, and low surface adhesion compared to pure chitosan, PE, and GP films.
* RESUMO -Filmes biopoliméricos têm contribuído com o setor de embalagens ecológicas e biodegradáveis. Contudo, aqueles de origem proteica são pouco aplicados nessa área devido ao caráter hidrofílico desse material. No presente trabalho, foram produzidos filmes de gelatina suína tipo A, utilizando a enzima transglutaminase (TGase) como agente reticulante. Através de um planejamento experimental composto central, foram determinados os efeitos da concentração de gelatina e quantidade de enzima na solubilidade de filmes em meio aquoso bem como suas características mecânicas: a tensão máxima de ruptura (σ), módulo de Young (E 0 ) e alongamento (ε). Verificou-se que a solubilidade foi reduzida de maneira significativa apenas para no nível máximo de TGase (0,231% m/V). As propriedades mecânicas tiveram comportamento similar à solubilidade, pois houve redução da tensão de ruptura e alongamento com o aumento da concentração de ambos, sendo isso indicativo do aumento de fragilidade do filme devido ao efeito de reticulação da cadeia polimérica. No entanto, o módulo de Young teve maiores valores em níveis baixos de concentração de gelatina e 0,2% de transglutaminase. INTRODUÇÃOOs biopolímeros, assim como os polímeros, são macromoléculas constituídas por moléculas menores, os monômeros, isto é, a unidade de repetição que forma o polímero ou biopolímero (Saldivar-Guerra e Vivaldo-Lima, 2013). Nesse contexto, as proteínas tem atraído grande atenção nas últimas décadas como possíveis fontes para o desenvolvimento de novos materiais de constituição polimérica devido à sua estrutura macromolecular altamente polar e reativa (Ebnesajjad, 2012).Materiais proteicos, como é o caso da gelatina, tem ampla aplicação em recobrimento de superfícies bem como na produção de filmes comestíveis, pois a película formada tem capacidade de preservar as características organolépticas dos alimentos (Nussinovitch, 2009). Isso se deve ao fato de que polímeros naturais como as proteínas fornecem boas barreiras para gases como o O 2 e o CO 2 , contudo são bastante sensíveis a presença de água (Baldwin et al., 1995). RESUMO-Mucilagens de diferentes fontes e seus derivados são considerados seguros para o consumo humano, sendo um potencial hidrocolóide para ser utilizado em diversas indústrias de alimentos, inclusive para elaboração de filmes comestíveis. Este composto está presente abundantemente nas cactáceas, dentro das quais se encontra o Cereus hildmaniannus K. Schum. O objetivo desse estudo foi a elaboração de filmes a partir da fração solúvel da mucilagem do fruto de C. hildmaniannus com diferentes concentrações de plastificante. Ensaios mecânicos (tensão de ruptura, modulo de Young e alongamento) e permeabilidade ao vapor de água foram realizados. A incorporação da proporção 1:1 de glicerol na solução aquosa a 1% de mucilagem gerou um alongamento de 71%, enquanto que a mesma solução com 1:4 glicerol: mucilagem (m/m) foi de 1,8%. A permeabilidade ao vapor de água aumentou linearmente nas concentrações de glicerol estudadas, variando de 0,226-0,992 g mm/kPa h m².
