La medición de la temperatura del centro geométrico de muestras en forma triangular se realizó con termopares tipo K referencia NIUSB-TC01 (National Instruments). Para la solución del modelo matemático se empleó el método de elementos finitos con la ayuda del software COMSOL Multiphysics 3.5. Para determinar el valor del coeficiente convectivo de calor se resolvió un problema de optimización minimizando el error medio relativo entre los valores de temperatura experimentales y temperatura simulados del centro geométrico. Los resultados del coeficiente convectivo fueron 390±17 W/m 2°C para 70°C, 455±11 W/m 2°C para 80ºC y 535±13 W/m 2°C para 90°C. Además, los porcentajes del error medio relativo obtenidos se encontraron por debajo del 5%, lo cual indica buena predicción del modelo matemático utilizado. The temperature of the geometric center of triangular samples was measured using reference K-type thermocouples NIUSB-TC01 (National Instruments). The mathematical model was solved with the finite element method using the software COMSOL TM Multiphysics 3.5. To find the value of the convective heat transfer coefficient an optimization problem was solved by minimizing the relative average error, between the values of the experimental temperature and the simulated temperature of the geometric center. The results of the convective heat transfer coefficient were 390±17 W/m 2°C to 70°C, 455±11 W/m 2°C for 80°C and 535±13 W/m 2°C to 90°C. In addition, the percentages of relative average error obtained are found below 5%, which indicates good accuracy of the mathematical model used.
Este trabajo presenta un análisis comparativo de varias técnicas de estimación no lineal cuando es aplicada a un bioproceso. El observador Luenberger extendido, el filtro de Kalman extendido y el observador de modos deslizantes fueron evaluados para un proceso de crecimiento microbiano. El desempeño de los estimadores no lineales es evaluado en términos de indicadores de error y su habilidad para hacer frente con incertidumbres del proceso tales como errores de medición e incertidumbre de las condiciones iniciales. Los resultados de la simulación sugieren que el filtro de Kalman extendido provee estimaciones precisas de los estados y que el Observador de Luenberger Extendido no es recomendable para este tipo de bioprocesos.
Este trabajo presenta la construcción de un modelo semifísico de base fenomenológica del proceso continuo de fermentación alcohólica con Saccharomyces cerevisiae. La estructura del modelo es obtenida por los principios de conservación de masa y energía aplicados al proceso. Los parámetros del modelo fueron obtenidos por aplicación de las ecuaciones de fenómenos de transporte y cinética de los procesos microbianos. El modelo tiene en cuenta las inhibiciones por concentración de biomasa, concentración de sustrato y concentración de producto. Adicionalmente tiene en cuenta el efecto de la temperatura sobre los parámetros asociados al metabolismo de la levadura. La simulación y la validación muestran que el modelo obtenido puede predecir de forma satisfactoria el comportamiento dinámico del proceso estudiado.
