O binômio tempo-temperatura é um dos principais indicadores de pronta análise para o controle da quantidade de micro-organismos nos alimentos, a fim de deixá-los aptos para o consumo. Tais dados constituem um elemento fundamental do método de Análise dos Perigos e Pontos Críticos de Controle (APPCC), e deve ser monitorado diariamente. Este estudo teve por objetivo avaliar a temperatura dos alimentos servidos pelo Restaurante Universitário da Universidade Federal do Tocantins, campus de Palmas, imediatamente após o preparo, durante o armazenamento, e durante a distribuição aos consumidores. A coleta de dados ocorreu num período de cinco dias, medindo-se a temperatura dos alimentos servidos no almoço e jantar. Os dados obtidos foram avaliados e a temperatura das preparações foi classificada em adequada ou inadequada seguindo os critérios estabelecidos pela Resolução n° 216, de 15/09/2004, e da Portaria CVS-6 de 10/03/1999. Concluiu-se que 100% das amostras quentes foram consideradas adequadas de acordo com a legislação vigente. Em relação às preparações frias, apenas 26,66% estavam de acordo com a legislação. ABSTRACT The time-temperature binomial is one of the main indicators of prompt analysis for the control of the amount of microorganisms in food in order to leave them fit for consumption. Such data are a key element of the Hazards and Critical Control Point (HACCP) method, and should be monitored daily. The objective of this study was to evaluate the temperature of the food served by the University Restaurant of the Federal University of Tocantins, Campus of Palmas, after preparation, during storage, and during distribution to consumers. Data collection occurred in a five-day period, measuring the temperature of the food served at lunch and dinner. The data were evaluated and the temperature of the preparations was classified as adequate or inadequate following the criteria established by Resolution No. 216, of 15/09/2004, and Ordinance CVS-6 10/03/1999. It concludes that 100% of hot samples were considered appropriate in accordance with the applicable laws. In relation to cold preparations, only 26.66% were in accordance with the law. Este estudio tuvo como objetivo evaluar la temperatura de la comida servida por el Restaurante Universitario de la Universidad Federal de Tocantins, Palmas de la escuela inmediatamente después de su preparación, durante el almacenamiento, y para su distribución a los consumidores. La recolección de datos se produjo en un período de cinco días, la medición de la temperatura de la comida que se sirve en el almuerzo y la cena. Se evaluaron los datos y la temperatura de la preparación se clasificó como adecuado o inadecuado siguiendo los criterios establecidos por la Resolución N ° 216 del 15/09/2004, y la Ordenanza CVS-6 10/03/1999. Se concluyó que el 100% de las muestras calientes se considere apropiado de conformidad con la legislación vigente. En cuanto a las preparaciones frías, sólo el 26,66% eran de conformidad con la ley. Gliomas are the most common primary malignant brain tumors in adults, and have a poor prognosis, despite the different types of treatment available. There is growing demand for new therapies to treat this life-threatening tumor. Quinone derivatives from plants have received increased interest as potential anti-glioma drugs, due to their diverse pharmacologic activities, such as inhibiting cell growth, inflammation, tumor invasion, and promoting tumor regression. Previous studies have demonstrated the anti-glioma activity of Eleutherine plicata, which is related to three main naphthoquinone compounds—eleutherine, isoeleutherine, and eleutherol—but their mechanism of action remains elusive. Thus, the aim of this study was to investigate the mechanism of action of eleutherine on rat C6 glioma. In vitro cytotoxicity was evaluated by MTT assay; morphological changes were evaluated by phase-contrast microscopy. Apoptosis was determined by annexin V–FITC–propidium iodide staining, and antiproliferative effects were assessed by wound migration and colony formation assays. Protein kinase B (AKT/pAKT) expression was measured by western blot, and telomerase reverse transcriptase mRNA was measured by quantitative real-time polymerase chain reaction (qRT-PCR). Eleutherine reduced C6 cell proliferation in a dose-dependent manner, suppressed migration and invasion, induced apoptosis, and reduced AKT phosphorylation and telomerase expression. In summary, our results suggest that eleutherine has potential clinical use in treating glioma.
Os fungos endofíticos vivem em simbiose com a planta hospedeira, sendo que muitos podem apresentar a capacidade de produzir os mesmos metabólitos ativos que seus hospedeiros, tornando-se um reservatório de uma infinidade de produtos naturais. Esta pesquisa investigou a planta Mirindiba (Buchenavia tomentosa) e a atividade antimicrobiana exercida pela planta e por fungos endofíticos isolados de suas folhas. Extratos aquosos da Planta e dos fungos foram testados contra bactérias e um fungo filamentoso, sendo que os extratos do vegetal e dos fungos apresentaram inibição das seguintes bactérias patogênicas: Salmonella Typhimurium, Staphylococcus epidermidis e Shigella flexneri e do fungo fitopatogênico Rhizopus stolonifer, demonstrando seu potencial biotecnológico como produtores de substâncias antimicrobianas. As concentrações inibitórias mínimas (CIMs) dos fungos que apresentaram propriedades antimicrobianas foram determinadas. Dois fungos (FC12 e FC31) inibiram as 3 bactérias testadas. Todas as bactérias foram inibidas por pelo menos um fungo na concentração de 25 µg/ml. Uma atividade antifúngica também foi observada pela difusão de substâncias produzidas pelo isolado (FC123), que inibiu em 53% o crescimento de Rhizopus stolonifer, causador da podridão mole em frutos. Este é o primeiro relato de isolamento e avaliação das propriedades antimicrobianas de fungos endofíticos da B. tomentosa.
Resumo O objetivo deste estudo foi avaliar a utilização de uma levedura probiótica na produção de barra de cereais, contribuindo para a produção de um alimento funcional inovador. Uma mistura de chocolate inoculada com 8 log10 células/mL viáveis da levedura foi inserida sobre a superfície da barra de cereais. Foram verificados os parâmetros físicos, químicos e sensoriais, e quantificado o número de células durante o período de armazenamento, até a morte celular da levedura. Os resultados demonstraram que a presença da levedura não afetou negativamente as propriedades físicas e químicas da barra de cereais. Nos parâmetros avaliados sensorialmente, não foi observada preferência em relação às barras sem levedura probiótica. A levedura se manteve viva (104 células/g) por 45 dias.
