RESUMO -O presente trabalho teve como objetivo determinar o efeito de diferentes temperaturas de armazenamento na qualidade de frutos de cajá-manga. Os frutos de cajá-manga foram obtidos junto ao CEAGESP -Companhia de Entrepostos e Armazéns Gerais de São Paulo, e transportados em caixas isotérmicas para o Laboratório onde foram selecionados quanto à aparência, estádio de maturação, ausência de danos físicos, depois sanitizados em solução de 50 ppm de cloro livre e acondicionados em bandejas de poliestireno expandido, envolto por filme de policloreto de vinila (PVC). O delineamento experimental utilizado foi o inteiramente casualizado, com três tratamentos (4ºC, 8ºC e 25ºC) e 5 épocas de avaliação (0; 3; 6; 9 e 12 dias após a instalação do experimento). Em cada coleta, foram avaliadas a firmeza, a acidez titulável, os sólidos solúveis, o teor de ácido ascórbico, a cor da casca e, também, a liberação de CO 2 pelos frutos ao longo do tempo. Foi observado que baixas temperaturas prolongam a vida útil dos frutos e que a temperatura de armazenamento influencia nas características avaliadas, sendo a temperatura de 8ºC a mais adequada para o armazenamento dos frutos de cajá-manga. FRUIT QUALITY OF CAJÁ-MANGA UNDER DIFFERENT STORANGE TEMPERATURESABSTRACT -This study aimed to determine the effect of different storage temperatures on fruit quality of ambarella. The ambarella fruits were obtained from the Company CEAGESP-General Warehouses of Sao Paulo and transported in cool boxes to the laboratory, where they were selected for their appearance, maturity and lack of physical damage, then sanitized in 50 ppm chlorine-free solution and packaged in polystyrene trays wrapped with film of polyvinyl chloride (PVC). The experiment was a completely randomized design with three treatments (4, 8 and 25 ºC) and 5 times interval (0, 3, 6, 9 and 12 days after the experiment installation). In each survey, firmness, titratable acidity, soluble solids, ascorbic acid content and the skin color were evaluated, as well as the release of CO 2 by the fruit over time. It was observed that low temperatures prolong the shelf life of fruits and the storage temperature influences the characteristics, and the temperature of 8 ºC was the most suitable for the storage of ambarella fruits.
RESUMO -O objetivo do trabalho foi avaliar a infl uência do tratamento térmico na coloração de frutos de lichia. Os frutos foram tratados por 0; 5; 10; 15; 20 e 25 minutos de imersão em água a 45ºC, embalados em bandejas de poliestireno expandido e fi lme de policloreto de vinila 0,020mm e armazenados em B.O.D. a 5ºC e 90±5 % de UR. O delineamento experimental foi em esquema inteiramente casualizado, com 6 tempos de armazenamento para as análises de coloração e enzimática, e até atingirem o limite de comercialização para a análise da vida útil, sendo os frutos analisados a cada 3 dias, com 3 repetições e 10 frutos por unidade experimental. Os parâmetros avaliados foram: análise visual do escurecimento, coloração e atividade específi ca da polifenol oxidase e da peroxidase. Os tratamentos usando 5 e 10 minutos de imersão foram os que apresentaram melhores resultados na manutenção da coloração dos frutos e na diminuição da atividade enzimática. THERMAL TREATMENT IN LYCHEE COLOR MAINTENANCEABSTRACT -The objective of the work was to evaluate the infl uence of the thermal treatment in the color of lychee fruits. The fruits were treated by 0; 5; 10; 15; 20 and 25 minutes of water immersion at 45ºC, packaged in expanded polystyrene trays and fi lm of polyvinyl chloride 0.020mm, stored in B.O.D. at 5ºC and 90±5 % of UR. The experimental delineation was in a completely randomized scheme, with 6 times of storage for the color and enzymatic analysis, until they reached the limit for the marketing for the analysis of the shelf-life, and the fruits were analyzed every 3 days, with 3 replications and 10 fruits in each experimental unity. The evaluated parameters were: visual analysis of the browning, color and specifi c activity of the polyphenol oxidase and the peroxidase. The treatments using 5 and 10 minutes of immersion showed the best results in maintaining the color of the fruits and in the reduction of the enzymatic activity.
RESUMO -Avaliaram-se os efeitos da irradiação ultravioleta (254nm, UV-C) na conservação de pêssegos cultivar Douradão, aos 5; 10; 15 e 20 dias de armazenamento com o uso da refrigeração (0ºC e 75-85% de UR). Os tratamentos foram: Controle (0 minuto de exposição -0 kj. m ), e T4 (20 minutos -7,52 kj. m -2 ). O delineamento experimental foi um esquema inteiramente casualizado, com 5 tempos de armazenamento: (0; 5; 10; 15 e 20 dias), com 3 repetições e 2 frutos por unidade experimental. Os parâmetros avaliados foram: sólidos solúveis (SS); acidez titulável (AT); relação SS/AT "Ratio"; pH; fi rmeza da polpa, respiração e vida útil. Os pêssegos não apresentaram alteração do pH e da AT durante o tempo de armazenamento.Os melhores valores de SS e fi rmeza da polpa foram obtidos com o tratamento T4. A taxa respiratória foi menor em T4. As alterações de SS, fi rmeza da polpa e respiração apresentadas pelos frutos do tratamento T4 foram menores que aquelas dos demais tratamentos, demonstrando a efi cácia do uso da irradiação ultravioleta. The experiment was a complete randomized design with three replications of two peaches per plot. The evaluated variables were: soluble solids (SS); titrable acidity (TA); relation SS/TA "Ratio"; pH; pulp fi rmness, respiration and shelf life. The peaches did not change the values of pH and the TA during all the storage. The best values of SS and pulp fi rmness were presented for the treatment T4. The respiration.rate was lower in T4. Changes of SS, and pulp fi rmness showed for the fruits of the treatment T4 were smaller than in the others treatments, thus showing the effi cacy of the irradiation use. RESUMOAnálises não destrutivas no tecido vegetal podem ser realizadas com os mais diversos aparelhos. Um dos mais usados na medida indireta da clorofila é o clorofilômetro. No entanto, podem existir outros aparelhos que realizem essa medição.O objetivo deste trabalho foi verificar a existência de correlação entre a leitura realizada pelo clorofilômetro com a leitura realizada pelo colorímetro. Para isso, foi instalado um experimento em delineamento em blocos casualizados, cujos tratamentos consistiam na aplicação de doses de nitrogênio em milho. As leituras, tanto do clorofilômetro quanto as do colorímetro, foram realizadas no florescimento pleno, nas folhas acima e oposta a espiga. Pode-se observar a existência de correlação positiva significativa entre as leituras realizadas pelo clorofilômetro e colorímetro nas folhas do milho, em seu florescimento pleno.Palavras-chave: SPAD 502, Chroma Meter-10, Zea mays. ABSTRACTNon destructive analysis in plant tissue can be performed with many more devices. One of the most used in the indirect measurement of chlorophyll is chlorophyll. However, there may be other devices that perform this measurement.The objective of this study was to verify the correlation between chlorophyll meter reading with reading by colorimeter.For this, an experiment in a randomized block design, the treatments consisted nitrogen application in maize was installed. The readings, both chlorophyll as colorimeter, were carried out in full bloom, and the leaves above the ear opposite. It can be observed that there is significant positive correlation between the readings taken by the colorimeter and chlorophyll in maize leaves in full flowering.
