El trabajo de investigación se desarrolló para evaluar el efecto de la concentración al vacío en las características fisicoquímicas de la pulpa de aguaymanto (Physalis peruviana L.). Se realizó el análisis biométrico, organoléptico del fruto y fisicoquímico de la pulpa de aguaymanto; seguidamente se llevó a cabo las operaciones como recepción de la materia prima, selección y clasificación, lavado y desinfección, escaldado, pulpeado, concentración al vacío y envasado. Los tratamientos de concentración al vacío realizados a la pulpa fueron: temperaturas de 60 y 70 ºC con velocidades de rotación de 2 y 3 m/s, para luego ser evaluados los sólidos solubles (lectura en el refractómetro), el pH (lectura directa en pH-metro), acidez (titulación con NaOH 0,1N) y viscosidad de la pulpa (lectura en el viscosímetro rotacional Brookfield) consideradas como propiedades de la pulpa de aguaymanto y una evaluación sensorial a los tratamientos realizados en color, sabor y aceptabilidad general. Los resultados obtenidos fueron analizados estadísticamente con el diseño completo al azar con tres repeticiones con arreglo factorial de 2 x 2, aplicando un análisis de varianza, con un 5% de nivel de significancia y una prueba de medias de Tukey. Con las inferencias estadísticas se determinó que el tratamiento T2v1 (70 ºC y 2 m/s) supera estadísticamente a los demás tratamientos; no se dan diferencias significativas entre los tratamientos T1v1 (60 ºC y 2 m/s), T2v1 y T2v2 (70 ºC y 3 m/s) correspondientes a pulpas concentradas al vacío de aguaymanto con acidez de 7,80; 7,73 y 7,42 %; el tratamiento T2v2 con un pH de 3,74 y una viscosidad de 9,97 Cp fue el mejor asegurando una mejor conservación de la pulpa. En la evaluación sensorial, el tratamiento T1v2 (60 ºC y 3 m/s) tuvo un puntaje mayoritario por los panelistas en cuanto a color; el tratamiento T2v1 fue el mejor en sabor y se obtuvo la mayor aceptabilidad por los panelistas.
