El estado de Coahuila, México, se caracteriza por la producción de queso artesanal elaborado a partir de leche de cabra. Este estudio se enfocó en el aislamiento, identificación y caracterización de bacterias ácido lácticas (BAL) presentes en este tipo de queso para usarlas como cultivo iniciador. Durante la investigación, se llevó a cabo el aislamiento e identificación de las BAL, caracterizándolas bajo pruebas bioquímicas tales como actividad acidificante, capacidad de inhibición, producción de CO2 y producción de aromas, y se seleccionaron aquellas que presentaron mejores características en las pruebas mencionadas anteriormente. Las BAL seleccionadas fueron preparadas para ser inoculadas en leche pasteurizada de cabra y, posteriormente, en la elaboración del queso. Los quesos se evaluaron mediante una prueba sensorial empleando la prueba diferencia de control, los resultados mostraron que los quesos enriquecidos con BAL presentaron características sensoriales globales diferentes al queso de cabra sin adición de BAL.

En este trabajo, se caracterizó el color de hilos de lana teñida artesanalmente en dos periodos (campañas 2014 y 2015) utilizados en la confección de sarapes de Saltillo, en México. El análisis espectral se hizo por Espectrofotometría UV-Vis de Reflectancia Difusa; el análisis cromático se realizó en el espacio de color CIELAB, utilizando el iluminante estándar D65 y el observador a 10 grados, a partir de los espectros de reflectancia. Una vez identificadas las coordenadas cromáticas, se convirtieron a los colores correspondientes mediante la ayuda de software. Finalmente, se calcularon los valores de ∆ECMC para reconocer las variaciones de color entre hilos del mismo tono, con distintas luminosidades y saturaciones, encontrando que en algunos casos los valores registrados correspondieron a variaciones apenas perceptibles por el ojo humano, lo cual es un parámetro de calidad en la confección de estos textiles, emblemáticos de la cultura mexicana. Con ello, se busca registrar las características colorimétricas típicas de estas artesanías, con el fin de coadyuvar a su protección intelectual y preservación.
El vertido incontrolado de desechos y excedentes generados como residuos vegetales en el medio rural son considerados como foco importante de infección para los cultivos. Estos agroresiduos se consideran ricos en polímeros de almidón y lignocelulosa, los cuales están formados por azúcares sencillos. Esta investigación trabajó con bagazo de uva (variedad merlot) y granada (variedad wonderful), empleándolas como materia prima para su hidrólisis térmica. Las variables evaluadas fueron azucares totales y azucares reductores en los bagazos sin hidrolizar, en los “slurry” hidrolizados y en el caldo hidrolizado. El incremento en la concentración de azucares tras los diferentes tratamientos, se logró efectivamente con residuos de uva (1.77 mg/ml), y granada (3.18 mg/ml), tomando en cuenta los resultados previos a la hidrólisis térmica plasmadas en este trabajo (1.31 mg/ml para uva; 2.08 mg/ml para granada). De acuerdo con los resultados obtenidos, existe una relación de eficiencia en la extracción de azúcares monoméricos y el tamaño de partícula empleado, mientras que el tiempo de procesamiento es un factor determinante en esta investigación. Por lo tanto, el tiempo de exposición en un proceso de hidrólisis térmica y el tamaño de partícula de la materia prima, son factores importantes por considerar, que afectan la liberación de glucosas de la materia lignocelulósica de residuos de uva y granada.
