Sour cassava starch (polvilho azedo) is a chemically and enzymatically modified starch with the specific property of expansion in bakery products without the use of any chemical or biological leavening agents. In this work, the cumulative knowledge about sour cassava starch is presented in relation to its physicochemical characteristics, with the purpose of establishing a relation between the application properties and some structural and chemical characteristics in order to design a model of the modified structure of starch and the most important technical variables. Such approach will help to provide some quality standards for future adequate valorization of sour cassava starch, especially with respect to potential use in gluten-free products. This work showed that a good sour cassava starch is significantly different from low expansion cassava starches with respect to pH, acid factor, swelling power, specific volume, and polymerization degree (intrinsic viscosity). These variables could be related to the maximization of sour cassava starch expansion for a future predictive decision analysis about a high quality sour cassava starch to the baking use.
<p> <span>The acquisition process of knowledge by organizations is not easy and its spread among individuals, organizations and networks is even more complex. The understanding of the mechanisms involved in the knowledge flow between organizations can help to minimize the problems associated with processes in supply chains. In this paper, we present a systematic search of literature, which aimed to identify the relevance of this issue and how it has been studied on the academic literature. We performed an identification and mapping of knowledge flows between two types of organizations (inter-firm level) of Brazilian chain pig farming: industries and producers (farmers). Among the agricultural activities, this activity is one of the most aggressive to the environment. Some factors associated with environmental sustainability and current market barriers in this chain were identified, where it is necessary to consider the dynamics of knowledge flows. For knowledge flows and practices being effectively implemented across organizations, it was noted that issues such as the motivation of the members are key factors which in order to apply valuable knowledge. Considering this, it is necessary that the reasons and benefits for sharing being clearly established. This study contributes to the perception of the importance of identify and map knowledge flows. It also contributes to the realization of further empirical research in order to examine knowledge flows among organizations.</span><span></span> </p>
A abordagem socioconstrutivista na gestão escolar: uma parceria para a construção do conhecimento -estudo de caso em uma instituição escolar em Recife/PE Andrea Medeiros Souza; Diego Jacob Kurtz
RESUMOO presente artigo aborda o tema Gestão do Conhecimento e enfatiza a importância de suas práticas dentro de uma Instituição Escolar em Recife que utiliza a abordagem de ensino e aprendizagem socioconstrutivista. Por meio de estudo de caso, buscou-se criar indicadores para a criação de comunidade de prática da Instituição, que já trabalha elementos voltados para a Gestão do Conhecimento, a partir do aspecto de fazer uso do conhecimento tácito. Teve como objetivo verificar a situação atual da Instituição educativa e, a partir da análise dos dados coletados pela aplicação do método Organizational Knowledge Assessment, e as três dimensões (pessoas, processos e sistemas), revelar uma parceria para a construção do conhecimento. O resultado da pesquisa demonstrou que foi possível visualizar quais os pontos fortes e os fracos para a implantação de um plano de Gestão do Conhecimento, vinculada aos processos de trabalho. E que para a realização das atividades se faz necessário o comprometimento da alta gestão com o plano, ciente da importância da implantação de ferramentas da gestão do conhecimento não apenas no âmbito de suas práticas, mas no contexto educacional, atuando diretamente na condução do processo de diagnóstico junto aos colaboradores. Conclui-se que os resultados da pesquisa apresentam evidências consistentes das dimensões do conhecimento e orientações para o desenho do plano de Gestão do Conhecimento.

In turbulent markets and scenarios that require extremely competitive and innovative organizations, the need to transform the resource base in accordance with the changing markets and technology is apparent. In order to do this, it is necessary to quickly identify and incorporate market opportunities, provide high capacity for learning, innovation and work collaboratively with other organizations in a network-in a collaborative way-to coordinate and transform their resource base. It is based on this information that this work aims to discuss the association between the role of an organization in a collaborative network and the development of dynamic capabilities, in response to environmental pressures and turbulence. Similarly, we seek to identify the impact (the improvement, or not) that generates the dynamics of organizations in a collaborative network. This paper brings two main contributions: the first lists a theoretical framework associating three main constructs: Dynamic Capabilities, Collaborative Networks and Turbulent Environments. The second proposes a conceptual model involving these three main constructs, facing adaptation, resilience and competitiveness of organizations.
