Es sabido que el consumo de insectos es una práctica tradicional en muchos países. Se calcula que más de 2000 millones de personas en 113 países consumen insectos. La entomofagia, que es como se conoce esta práctica, genera gran interés por sus posibilidades para garantizar la seguridad alimentaria a nivel mundial, debido a que muchos estudios certifican que diversas especies de insectos tienen no solamente elevadas propiedades nutricionales, sino que posiblemente contengan compuestos bioactivos útiles para la salud humana. Desde los comienzos del siglo XIX, la visibilidad de los movimientos que propenden por el bienestar animal y promueven la reflexión ética sobre el consumo de alimentos ha traído consigo también un interés aumentado por el consumo de insectos de forma más masiva. A pesar de las barreras culturales y sensoriales, esta curiosidad ha hecho posible la puesta en marcha de criaderos pequeños de insectos comestibles. Estos tendrían la ventaja de contribuir a mitigar la escasez de alimentos en muchas partes del mundo – agravada por el cambio climático – y serían accesibles a personas de bajos recursos que no pertenecen al sector de las grandes industrias, pues producirlos no requiere grandes lotes y costosos insumos en comparación con otro tipo de cultivos.
Para el año 2050 se espera un aumento del 60% al 70% en el consumo de productos de origen animal. Este aumento en el consumo demandará enormes recursos, siendo las fuentes tradicionales de proteína las más costosas, sobreexplotadas y perjudiciales para el ambiente. Explorar nuevas fuentes de proteína animal se convierte en una necesidad para el sector agropecuario. Es por esta razón que la FAO (2009) incluyó el uso de insectos en la alimentación humana y animal como una fuente alternativa de nutrientes desde el 2003 debido a sus características nutricionales y a su bajo impacto ambiental. Una de las especies más promisorias es el grillo doméstico tropical (Gryllodes sigillatus), cuyo potencial como sistema productivo sostenible ha sido demostrado en varios países asiáticos como europeos. El propósito de este artículo es presentar los aspectos asociados al aprovechamiento y producción de la especie G. sigillatus que pueden hacerla sostenible como alimento en Colombia, dando cuenta de las características generales y nutricionales de la especie y las ventajas socioeconómicas y ambientales de la cría de estos grillos y de los insectos en general. Se establece que, aunque existen emprendimientos en el país, es importante continuar con la investigación sobre esta especie en términos de producción a gran escala, así como en términos nutricionales para potenciar el sector económico y mejorar las condiciones materiales de agricultores en el país.

ResumenAntecedentes: en la Región Caribe colombiana, los dulces han tenido una larga tradición de producción, consumo e importancia, es por eso que ya hacen parte de la identidad de los locales y de todo el país. Siempre que se evoca la gastronomía del caribe colombiano, en especial la de Valledupar, los dulces aparecen como primera opción en la lista de postres típicos. Reflexión: la diversidad cultural que caracteriza las regiones colombianas se refleja claramente en su gastronomía, en la que los dulces tradicionales se consumen como ese "bocadito dulce que acompaña el almuerzo", pero, más que estar presentes en nuestras mesas en el acto de comer, los dulces en un solo bocado evocan historia, geografía, religión, tradición, técnica, cultura, sabores y saberes; por lo que, con este trabajo, se busca realizar un acercamiento a estos aspectos para luego caracterizar los dulces según materia prima, forma de elaboración y consistencia, haciendo mediciones de algunas de sus propiedades organolépticas como pH y concentración de sólidos (°Brix). Conclusiones: todo lo anterior ha permitido entender que la cocina dulce de Valledupar funciona como un ejemplo emblemático para exaltar las complejidades tanto culturales como técnicas que hacen parte de las cocinas en Colombia. AbstractBackground: In the Colombian Caribbean region, candies have had a long tradition of production, consumption and importance, thus contributing to the identity of the locals and the entire country. As such, when Colombian Caribbean gastronomy is evoked, especially that of Valledupar, candies appear at the top of the list of typical desserts. Reflection: The cultural diversity that characterizes the Colombian regions is reflected in its gastronomy, where traditional candies such as "bocadito dulce que acompaña el almuerzo " are consumed, but more than being present at our tables, candies evoke, in a single bite, the history, geography, religion, tradition, technique, culture, tastes and knowledge of the area. This paper seeks to address these aspects and then characterize the candies according to their raw material, form of preparation, and consistency, and measuring various organoleptic properties such as pH and concentration of solids (°Brix). Conclusion: This study has contributed to the understanding that the Valledupar´s sweet cuisine functions as an emblematic example of both cultural and technical complexities that are part of Colombian cuisines. DP analysis is a tool that can be used for formulating dietary recommendations based on food culture.
