Como aporte dentro de la responsabilidad que tiene la gastronomía en los los servicios de alimentación y con la sociedad, fue estimado el valor nutricional de cada receta a partir de cálculos realizados con información nutricional de la Tabla de Composición de Alimentos Colombianos del Instituto Colombiano de Bienestar Familiar (ICBF), y la base de datos de alimentos del departamento de agricultura de los Estados Unidos (USDA).
Entradas, platos fuertes, postres, bebidas y cocteles fueron elaborados y estandarizados en veinticuatro recetas inspiradas en la cocina tradicional con la incorporación de chontaduro y leche de coco. En este capítulo, además, se involucraron aspectos culturales, técnicas culinarias, y se integraron conceptos desde la ciencia que aportan a los saberes del profesional en gastronomía.
En el libro Chontaduro & coco en salsa de ciencia, cultura y técnica se integran diferentes saberes: las artes culinarias; la cultura gastronómica, por medio de la descripción del origen de los productos y los desarrollos culturales, tanto para las prácticas de cultivo como para los usos de los frutos; y, desde la ciencia de alimentos, se definen los principales componentes que describen los frutos y las características organolépticas (perfil sensorial). Estos saberes integran lo que es un profesional en gastronomía, por lo que en un último apartado se dan a conocer diversas aplicaciones gastronómicas con chontaduro y coco bajo criterios creativos y nutricionales.
El chontaduro es una palma que se da en América tropical de forma silvestre y, también, se ha domesticado por diferentes comunidades. Este capítulo muestra su desarrollo ecológico en Colombia y su producción en los departamentos de Caquetá, Cauca, Chocó, Nariño, Putumayo y Valle del Cauca, entre otros. Tradicionalmente, se puede encontrar en preparaciones como cremas y jugos y, generalmente, se consume el fruto cocido. Se destaca su contenido de 40 % en almidón, 6 % de proteína y 10 % de grasa. Desde el punto de vista sensorial se describe como fibroso, oleoso/grasoso, frutal y astringente.
