La nutrición es un conjunto procesos y reacciones mediante las cuales los seres vivos toman del medio, en el que habitan, las sustancias químicas que necesitan para crecer, multiplicarse y hacer uso de la energía.Las sustancias mencionadas anteriormente, se denominan nutrientes y son utilizadas con dos fines: energéticos cuando se requieren para el mantenimiento y biosintéticos cuando se demandan para la síntesis de componentes (anabolismo) En el primer caso (energéticos) las bacterias se dividen en litótrofas cuando hacen uso de sustancias inorgánicas simples como (SH2, S, NH3, NO2-, Fe, entre otras); y organótrofas cuando su requerimiento es de sustancias orgánicas (carbohidratos, hidrocarburos, lípidos, proteínas y alcoholes entre otras). En el segundo caso (biosintéticos), se pueden diferenciar en: autótrofas, cuando la síntesis la realizan a partir de sustancias inorgánicas simples (CO2) y heterótrofas cuando su fuente de carbono es orgánica, pero también pueden utilizar otros elementos distintos al C, que pueden ser captados en forma inorgánica.Sean autótrofas o heterótrofas, todas las bacterias requieren de una serie de sustancias químicas, que se pueden clasificar en macronutrientes o micronutrientes de acuerdo con la cantidad que de estas se requieran.
El cuidado de las fuentes hídricas en el territorio colombiano es una prioridad que se enmarca dentro de los desafíos que surgen a partir de la propuesta de los Objetivos de Desarrollo Sostenible. En este contexto, es importante el papel que juega la Educación Ambiental en todos los niveles de formación y a partir de ahí se vuelve relevante revisar y aprender los conceptos científicos que se derivan del agua como sustancia pura, lo que implica un trabajo didáctico que tenga en cuenta los diferentes tipos de conceptos que forman parte de las disciplinas científicas que convergen en el lenguaje ambiental. Por lo tanto, se propone una reflexión en torno a los resultados de dos investigaciones llevadas a cabo por el grupo de Investigación Planificación en Gestión Ambiental Eficiente de la Universidad Colegio Mayor de Cundinamarca que evidencian la necesidad de la fundamentación conceptual para trascender con argumentos, desde la valoración del agua solo como recurso hídrico hasta la valoración del compuesto como un reactivo con propiedades definitivas para la sostenibilidad del planeta y de nuestro territorio.
Tradicionalmente, en ambientes como laboratorios, el hogar o en lugares dedicados a la manipulación de alimentos, se suelen emplear desinfectantes de tipo sintético, que por el alto contenido de agentes químicos como el cloro, llegan a producir efectos perjudiciales para la salud. En la actualidad se han evaluado alternativas para producir y utilizar sustancias amigables con el medio ambiente, que sean lo menos nocivas posible, en este sentido se ha venido promoviendo el uso de desinfectantes ecológicos. En el caso de las cocinas, por ejemplo, la sobreexposición al uso de un desinfectante químico puede traer complicaciones al personal que labore allí y además el alimento pueda alterarse por efectos de la contaminación cruzada. Un ejemplo de alternativa de desinfección, que vale la pena revisar es el Vinagre, sus características químicas relacionadas con la presencia de ácido acético en concentración alta, puede desencadenar procesos de degradación más rápidos, que a su vez inciden en minimizar el riesgo tóxico asociado a sustancias químicas y sintéticas. Centrado en lo anterior, el semillero PGAE adscrito al programa de Ciencias Básicas de la Universidad Colegio Mayor de Cundinamarca orientó una revisión sistemática centrada en las propiedades químicas del Vinagre y de su constituyente fundamental (el ácido acético). Este trabajo fue presentado en la edición regional del encuentro de semilleros RedColsi (2021) en el marco de la investigación formativa y a continuación se relacionan los resultados más relevantes que sugieren la necesidad de realizar investigaciones centradas en el tema en cuestión, como una alternativa que pueda replicarse y usarse de manera generalizada en el marco de la química verde.
