A goiaba (Psiduim guajava L.) é utilizada não apenas para o consumo “in natura” como também para atender a uma demanda substancial para conservas industriais possibilitando, pela sua desidratação, um novo insumo nas indústrias alimentícias. Com vistas a atender a este mercado, o objetivo deste trabalho foi realizar a análise sensorial da goiaba passa da variedade Paluma obtida utilizando-se técnicas combinadas de desidratação osmótica e secagem convencional. Utilizaram-se goiabas nos estádios de maturação verde e madura, pré tratadas em solução de sacarose, com duas concentrações (40 e 50 °Brix) e submetidas à secagem em estufa com circulação de ar, em quatro temperaturas (40, 50, 60 e 70 °C). A análise sensorial foi realizada através de teste de aceitação utilizando-se a escala hedônica de 5 pontos, avaliando os atributos aparência, cor, aroma e sabor. As goiabas passas no estádio de maturação verde foram as de melhor aceitabilidade; As passas obtidas pela secagem de 40ºC foi a de melhor aceitação sensorial.
A carne de sol é a carne mais conhecida e consumida, e os sistemas de produção dela apresentam grande diversidade tecnológica, variando-se desde os pequenos processamentos em açougues da forma tradicional à industrialização em larga escala, realidade que incide sobre o Padrão de Identidade e Qualidade deste produto. Assim, objetiva-se com este trabalho analisar sensorialmente dois tipos de cortes cárneos mais consumidos nas cidades de Caicó-RN e Currais Novos-RN, avaliando através do teste de aceitação os atributos sabor, aroma, cor, aparência, e dureza das carnes de sol Coxão Mole e Alcatra comercializadas nas duas cidades, como também a intenção de compra do consumidor. Portanto dos quatro tipos de carnes de sol e atributos analisados, a amostra mais aceita também foi a que obteve maior percentual de intenção de compra, sendo o Coxão Mole produzido em Currais Novos-RN.
